22 years as a chef.

I've cooked for footballers, celebrities and some of the biggest names in hospitality.

Today, I sell cheese toasties from a van.

Some people will see that as a step backwards.

I see it differently.

After burnout, anxiety, setbacks and starting again more times than I'd like to admit, I realised success isn't about fancy job titles.

It's about building something that's yours.

Something that makes people smile.

Something that gives you a reason to get out of bed in the morning.

Say Cheese isn't just a food truck.

It's proof that it's never too late to start over.

First ever pop up at Daltons Dairy and honestly… what a day ☀️🧀🍦

You lot absolutely showed up.

Loads of toasties flying out. Smiles all day.

Slightly questionable tan lines.

Massive shout out to our team who grafted in that heat and kept the cheese flowing 🫡🔥

AND… I finally got to try what they reckon is the UK’s first Spinner Ice Cream 👀

Safe to say… I get the hype.

We genuinely didn’t expect this.

Today Travelling Dad came over completely off his own back. We’d never spoken before, never invited him down and had no idea he was coming.

He walked up to the Big Cheese Van and said we stood out amongst a huge selection of food traders.

Then gave us 9.8/10.

That’s proper high praise and honestly a bit surreal.

We’re a small independent business and there are a lot of moments where you question whether people notice the details, the long days, the extra effort, the ideas that seem a bit mad at the time…

Then something like this happens.

What made it even better was someone also donating £10.50 to the Cheese Tax today for the dog treats and causes we support. Little moments like that remind us people are buying into more than just food.

Massive thank you for stopping by and sharing us with such a huge audience.

And thank you to every person who’s queued up, tagged a mate, backed us, brought their dog over or believed in what we’re building.
