Meet Matthias, Chef

Matthias joins us all the way from Germany, previously moving from Germany to Denmark and then to Bangor of all places.
Upon arriving in North Wales he was seeking a new challenge in hospitality and after bumping into Lisa from North Wales Grub in a Bangor coffee shop, he asked for advice on where to work in the local area, Lisa very kindly recommended The Jackdaw!
Matthias has now been with us here at The Jackdaw for 9 months, taking care of the garnish section in the kitchen, preparing and finishing all of the vegetable and herbal garnishes.

When he’s not at The Jackdaw, Matthias enjoys cooking and baking at home, as well as playing guitar and exploring the stunning part of the world we are lucky to call home.

Meet Elouisa, Front of House

Elouisa has been with us since the age of 15, now 18 and semi-fledged the nest but joins us when she’s home from university. At The Jackdaw, Elouisa loves to speak her first language of Cymraeg to our guests.

When she’s not at The Jackdaw, Elouisa enjoys reading, sunset walks and the Oxford dictionary, she can also be found studying English Literature and Religion at York University.

Meet Sam, Restaurant Supervisor

Sam heads up our front of house team and looks after most things that happen outside the kitchen. Although a relative newcomer to the team, Sam has been a long-time friend and supporter of The Jackdaw’s journey.

Having spent much of his career in London working with people recovering from eating disorders, (although a very different environment) through that work, he saw first-hand how food can be much more than something we eat.
A ritual bringing people together to connect meaningfully with each other and the experience itself — something he strives to create at The Jackdaw every day.

Outside of The Jackdaw, you’ll usually find Sam laughing loudly with the music turned up, supporting Manchester United through thick and thin, and doing his bit to prop up Wild Horse Brewing Co

Meet Lucy, Front of House

Lucy comes as a new face to The Jackdaw, however not a new face to Conwy, having worked in the wonderful local beverage shop Vinomondo and also previously running her very own restaurant around the corner.

When she’s not at The Jackdaw, Lucy enjoys painting, having previously had one of her pieces in the Royal Academy of Art in London Royal Academy of Arts
Lucy also enjoys long walks on the beach and enjoying a beverage or two at the local TAPPS Conwy

Meet Louis, Chef

Louis is our longest serving member of The Jackdaw team, having started 1 month after we opened!

Working in the kitchen, Louis mainly takes care of the earlier courses, such as the ‘Hafod & Conwy Sauce Rarebit’ and ‘Lamb Cawl’, as well as the desserts, such as ‘Gynwys’ and ‘Treacle Toffee’.

If he’s not at The Jackdaw, you will most likely find Louis supporting the Iron’s (tough times) at a local championship game or sinking a glass of the finest French wine.

Meet Tudor, Sous Chef

Tudor has been part of the team for over 3.5 years, bringing a wealth of knowledge and experience to both the kitchen and front of house team. Specialising in the preparation and cooking of our meat and fish dishes, helping ensure every plate leaves the kitchen at its best.

When he’s not at The Jackdaw, Tudor enjoys an active lifestyle, whether that’s running & exploring the local landscape, or swimming in the sea. He’s also partial to a local beer and the occasional trip away to satisfy his passion for all things food & audio.
