Hirsel Highland Beef!

I can't describe how much I love it when the butcher sends photos of the beef aging...the anticipation 😍

We have taken delivery of the forequarter, so there are lots of fresh burgers, sausages, mince, chuck steak and short ribs.

Importantly, if you would like fresh Hirsel Highland Beef brisket, get yourself along very soon! It always sells out first!

The hindquarter has some aging to do yet but it will be worth the wait for steaks and the rest! 🥩

I mean...the awards just keep on coming 🤣

I walked into the Birgham village hall with a box of veg and very nearly turned round and walked straight back out, having seen the quality of the other entries! One of the marrows apparently weighed 4 stones 🤯

The small gardener had planted all of the seeds and watered everything for months but sadly wasn't allowed out of the car as she has croup. So her Grandpa and I put her produce out for her instead, while she watched Peppa Pig in the car.

We didn't expect much, however we can now say that at The Homestead we are serving award winning veg:

Tomatoes, cucumbers and pumpkins 3rd in the collection of 3 vegetables
Potatoes 3rd
Marrow 2nd
The ugliest vegetable...a warty pumpkin, 1st!

And to top it off, the flowers she grew, picked and tied gardening twine round won the hand tied bouquet and this insane trophy 🏆 sadly we weren't there for the prize-giving but it definitely cheered up this sad little girl! Also she's lethal with the hose in the greenhouse, I generally hide outside and leave her to it if I don't have a change of clothes in the car!

We are still on a bit of a high after Friday evening! We won Food and Drink Producer of the Year at the SBBEA awards...

I didn't hear anything other than our name but apparently the judges said:

"The Homestead has an outstanding commitment to local provenance, sustainability and showcasing the best of Borders produce with it's authentic Estate to Plate approach."

How lovely 😍

We have just seen the official photos by Phil Wilkinson for Scottish Borders Chamber of Commerce and thankfully the lipstick has removed itself from my teeth by this point 🤣

⚠️ Before you read: This post talks openly about farming animals for food, including carcass grading. If that’s not something you’re comfortable with, please scroll past — no offence taken! ❤️

🐂 Three years, plenty of experimenting, and we think we’ve cracked it.

We’re really proud to have received our first Highland carcass graded R4L.

It might just look like a set of letters and a number, but there’s actually a lot behind that grade.

Highland cattle are a traditional native breed, and they mature much more slowly than many modern beef breeds. We take ours right up to their 30 months — giving them the time they need to grow and finish properly.

But getting the best from them isn’t simply a case of leaving them to it.

Over the last 6 years, we’ve tried different approaches to find what produces the best combination of animal welfare, natural growth, finishing and eating quality.

🌱 100% grass
❄️ Wintering outdoors
🏠 Wintering indoors
🌾 Feeding outdoors
…and plenty of combinations in between.

It’s been a bit of a learning curve, but this year we think we’ve found the sweet spot.

This bullock killed out at 55%, which is a really good result for a native breed, and achieving an R4L carcass is something we’re genuinely delighted with.

And there’s still a fair bit to do before it reaches your plate.

The beef will be going into the butcher over the next couple of weeks, with the prime cuts hanging for 28 days to develop flavour and tenderness.

This is the bit of farming that we really want people to understand.

Good beef doesn’t just appear in a plastic tray.

It takes years of growth, daily care, good stockmanship, careful feeding, observation, trial and error — and a lot of patience.

And when we’re producing food that we’re then going to put on the shelves of our own shop, we really do care about getting it right.

Did you know that The Hirsel has a rather unexpected connection to the Earl of Sandwich?

It turns out there’s a lovely little piece of history behind your sandwich at The Homestead!

The Earls of Sandwich and the family of the Earls of Home at The Hirsel descend from different branches of the same Montagu family.

The family tree goes back to Sir Edward Montagu of Boughton (c.1530–1602). His son Sir Sidney Montagu was the ancestor of:

Edward Montagu, 1st Earl of Sandwich (1625–1672)

…and several generations later came the famous:

🥪 John Montagu, 4th Earl of Sandwich (1718–1792) — the Earl whose name became forever associated with the sandwich!

Meanwhile, another branch of the Montagu family became the Dukes of Montagu. Through marriage, the Montagu inheritance passed into the Scott (of Buccleuch) family and eventually to:

Lady Elizabeth Scott (1770–1837)
who married Alexander Home, 10th Earl of Home (1769–1841) in 1798.

Their son, Cospatrick, 11th Earl of Home, later married Lucy Elizabeth Montagu (1805–1877) — bringing the Montagu connection into the Home family yet again.

So while the famous Earl of Sandwich didn't live at The Hirsel, his family and the Home family shared Montagu ancestry — and that gives us a rather delicious excuse to celebrate the connection!

🐾 Happy National Dog Day! 🐾

Jean the collie is living proof that you can be exceptionally intelligent, beautifully obedient and incredibly well trained… and still have absolutely no idea where it is appropriate to lie down. Always under your feet 😂

She LOVES rounding up the horses. 🐴
She is TERRIFIED of sheep. 🐑
She adores the leaf blower. 🍃
And apparently almost the most thrilling sound ever invented is tin foil being ripped. 🤷‍♀️

But nothing — and I mean NOTHING — compares to the first few bars of “Bits and Pieces”.

The moment she hears it, Jean knows her services are required.

She springs into action, bouncing around like the world’s noisiest, chavviest kangaroo, enthusiastically singing at a volume that suggests she has been personally invited to headline the concert. 🎶🐕🦘

She may be a highly intelligent, perfectly obedient "working" collie…

…but she is also an absolute bloody lunatic. ❤️😂

Wouldn’t have her any other way.
