8 Plates is taking over the Fishery for one night only.

On Friday 30 October, Mark, the chef behind 8 Plates, is bringing his eight-course British coastal menu to the Fishery for just 40 guests. This is your chance to eat in the Long Room, looking out over our oyster beds in the Pyefleet Creek.

The menu has been created especially for this evening, built around the produce and the water outside the window. Our Colchester oysters, native lobster and turbot are all on it, alongside, fire and fermentation, and it finishes with a sweet treat.

🦞 The Lobster Roll Bundle 🦞

We got some new crayfish tails in and couldn’t resist pairing them with our own lobster meat to create a delicious lobster roll. The results were so good we decided to turn it into a bundle.

What’s inside:
🦞 100g lobster meat
🦐 A tub of crayfish tails in brine (150g drained weight)
🥄 Your choice of mayo: real, lemon, chilli, oak smoked or garlic

Just add bread! We went for brioche and the sweetness works perfectly with the lobster and crayfish.

How to make it: mix the lobster and crayfish with a tablespoonful of mayo (don’t do too much, you want the flavour to come through), then fill your rolls, and finish with a scattering of chopped chives.

The bundle is £25.00 and serves 2-3, depending on how generous you are with the filling!

From the Test Kitchen: BBQ Prawns, three ways 🦐

Two new marinades just landed at the fishery, so we put them straight to the test, on Friday evening, with the sun going down over Pyefleet Creek.

We took a bag of our raw peeled prawns and split it in two. Half went into Chiltern Oil's Spicy Barbecue marinade with a drizzle of olive oil. The other half went into Badu's Tandoori Masala Marinade, stirred through natural yoghurt. Six hours of infusing, then onto the BBQ they went.

Side by side on the plate, they looked almost identical. It's the first bite that tells you which is which, one smoky and deep with a proper char, the other warm with spice that builds.

The BBQ was still hot, so we didn't stop there. Whole tiger prawns went on too, deveined and stuffed with a garlic & herb compound butter. Simple, but hard to beat when the shell's still smoking.

It’s National Oyster Day 🦪 and every oyster you eat of ours starts here, in the Pyefleet.

From the crew out on the water in bitter cold and blazing heat, dredging using the same traditional methods passed down for generations, to the team washing, grading and packing back on shore, it takes a lot of hands to get an oyster from the Creek to your table.

It’s slow, careful work, but it’s what gets you an oyster worth celebrating.
