Ripley's 1st Birthday Cake

The second part of my crazy busy weekend was delivering this Octonauts cake for Ripley's 1st birthday. This one was really special for me. A few years ago I made Ripley's parents' wedding cake and when his mum heard that I was coeliac and only make gluten-free bakes, she dropped me a message. Ripley's sister Harley has Coeliac Disease, so it was important to her that Harley could enjoy the birthday cake safely alongside everyone else. Harley is also an absolute superstar. She recently climbed Snowdon to raise money for Coeliac UK, which is an amazing achievement.
This was actually my first bespoke cake in a little while and I forgot just how much I love making them. It was so nice to get creative again and I loved bringing the Octonauts theme to life. A huge thank you to Bev from On The Cake Front - Essex for the printed and acrylic toppers. They finished the cake off perfectly.

Duxford D-Day Flying Day
The first stop on what turned out to be my busiest weekend since opening the horsebox was Duxford's D-Day Flying Day on Saturday.
Although the weather wasn't quite on our side, we still managed to see some incredible aircraft take to the skies and the atmosphere throughout the day was fantastic.
For me, this event was also a chance to trial some brand new products. My new Fondant Fancies made their debut and, safe to say, they were a huge hit! Not only with visitors to the horsebox, but with the staff too. Seeing people's reactions when they realised they were gluten-free was epic. I also introduced a couple of new flavours to the menu:

Biscuit Barrel Rocky Road

Brownie Caramel Crunch

Both of which completely sold out!

In fact, the whole day exceeded my expectations. We sold out, restocked, and then sold out all over again. As a small business owner, those are the days you dream about.
What makes it even more special is that so many people who don't need to eat gluten-free chose our bakes simply because they looked and tasted amazing. A huge thank you to everyone who stopped by for a cake, coffee, or just a chat. Your support means more than you'll ever know.

Well... that weekend was amazing!

My busiest weekend since opening the horsebox. From Duxford Flying Day on Saturday, to a very special birthday cake delivery, and then my first Sunday at Saffron Walden Farmers Market, it was a weekend full of incredible customers, amazing conversations, and a lot of cake!
'll be talking about each event in more detail throughout the week, but today I wanted to take a moment to thank a business that truly went above and beyond for me on Friday. When I discovered that DPD hadn't delivered my coffee in time for the weekend's events, I honestly wasn't sure what I was going to do. I notified the team at Little Fin Coffee Roastery and do you know what they did?. Rather than simply apologising for something that wasn't even their fault, they got in the car and personally drove the coffee to me to make sure I had it in time for the event.
That level of customer service is rare these days and it meant the world to a small business owner who was already juggling a very busy weekend.
So a huge thank you to the team Your kindness, support, and willingness to go the extra mile didn't go unnoticed.

This weekend reminded me just how amazing the small business community can be.

Today has been all about prep!
I've been gathering all the ingredients ready for this week's events and a very special birthday cake that I am SO freakin' excited to make!
There's something so exciting about seeing all the ingredients lined up before i turn them into something amazing from flour and sugar to the final decorations, every cake starts right here as ingredients

After working all through half term, it’s actually been really nice to have a teacher training day with my little one today. Running a business means there’s always something that needs doing, and school holidays aren't usually much of a holiday when you're self-employed. So having an unexpected extra day together has been lovely.
We've had a slower morning, a few cuddles, plenty of chats, and I've been reminded how quickly these moments pass. The work will still be there tomorrow, but today I'm just grateful for the extra time together.

I’ve been a cake designer for over 18 years, however after having my son four years ago, a health issue changed everything. Suddenly gluten was no longer an option for me and honestly every gluten-free cake I tried was nowhere near as good as its gluten-filled counterpart.
So I did what I know how to do best I went back to the beginning. I took everything I knew about baking and rebuilt it recipe by recipe, adapting them all to gluten free without ever accepting “that’ll do”. Every cake I made had to taste spectacular. I wanted people to eat my cakes and genuinely not be able to tell the difference and you know what? They can’t. I truly believe gluten free cakes should still be moist, melt-in-your-mouth, full of flavour and just as indulgent as any other cake. Now you’ll usually find me baking celebration cakes, serving coffee & cake from our horsebox at markets and events, and bringing The Phoenix Cake Company to as many people as possible.
I’ve got some amazing events lined up this year and I’m especially keen to bring the horsebox to more gluten-free festivals and events too

This weekend me and my hubby got away for a little break and visited a farmers market here in Essex. There was such a great range of food stalls and loads of lovely small businesses you can really see how much work goes into these events, however as someone who is coeliac, there was nothing there that was actually coeliac safe for me to eat, now this isn’t me having a dig at stall holders at all, because not every business can cater safely for cross contamination and that’s completely understandable. But I do think there’s still a huge misunderstanding when it comes to coeliac disease at markets and events as recently when I’ve been emailing a few markets so often the response I get is:
“Sorry, we already have a cake vendor.” however what many organisers don’t realise is that having a stall that offers gluten free products is very different from having a vendor that is fully coeliac safe. For people with coeliac disease, cross contamination is a huge concern, and most coeliacs simply aren’t going to risk eating products prepared around regular flour even if gluten free options are available. So when events only allow one general cake stall, it can unintentionally leave the coeliac community without any safe options at all.

This isn’t about being difficult or expecting every stall to cater for everyone. It’s just about awareness, inclusion, and understanding that “gluten free available” and “safe for coeliacs” are not the same thing. So even if you are only able to offer one coeliac safe alternative trust me when I say it would be used and if you are looking for a coeliac safe coffee and bakery horsebox box for your next event, market, wedding, celebration. I'm here for it! xx

Yesterday at Duxford was our first flying day of the season and what a start. The weather was amazing and you kept us busy all day. We completely sold out of cake and even ran out of milk at one point.

We had so many lovely compliments about our brownies and coffee, with one customer even coming back to tell us it was the best flat white he’d ever had.

Thank you to everyone who stopped by for coffee, cake and a chat.

We’ll be back at Duxford on the 6th June for the D-Day Flying Day.

We had the most amazing time at the Wild Keep Weekend! Not only did I meet some lovely new customers, but I also made some fantastic new connections with other incredible makers

This Saturday I’ll be back at Duxford for their first Flying Day of 2026! You’ll find me by the AirSpace hangar serving amazing coffee and cakes whilst enjoying the planes overhead
