No faff, no fuss just really good cake (that happens to be gluten-free). We focus on taste as well as design only using the finest locally sourced products. All of our curds and jams that go into our bakes are homemade. You can now get your hands on Phoenix Cake Company bakes at Mr Hanna’s! I absolutely love what these guys are bringing to Coggeshall, great coffee, lovely food, free live music on Thursday nights and they really care about making sure there are options for everyone. Our bakes are completely gluten free and arrive individually wrapped and labelled ready to go on the counter. I'm so excited to have our bakes somewhere local that cares about the same things we do

Did you know you can hire our horsebox? We don’t just pop up at markets and events, our completely gluten free bakery & coffee horsebox is also available to hire for your own event. Weddings, parties, celebrations, corporate events, family day if you’ve got something planned and fancy doing things a little differently, we can bring the coffee and cake to you. We can tailor what we offer depending on your event, from freshly made coffees and a counter full of our bakes to something a little more bespoke. And of course, everything we serve is completely gluten free, so for once your gluten free guests don’t have to wonder what they can have. Got something coming up? I thought I would start doing a little reintroduction to some of the things we offer at The Phoenix Cake Company and first up is bespoke cakes Yes I do still make them! I know you see so much of the horsebox on here now that I probably don't share my cakes anywhere near as much as I used to but I'm still taking orders for birthdays, anniversaries, weddings and all your special occasions. Everything I make is completely gluten free and made in my coeliac safe kitchen but that absolutely doesn't mean you have to be gluten free to order from me. I've worked really hard on my recipes over the years because I never wanted people to eat one of my cakes and think "that's good for gluten free" I wanted you to eat it and genuinely not know the difference. So whether you need a completely safe cake because you or someone in your family is coeliac or you're not gluten free at all and just want a really lovely cake you can still order from me.

Well… today turned out to be pretty special
After a last-minute change of plans, we ended up at Bang & Fuel Car Show in Rettendon today, raising money for Prostate Cancer UK and I genuinely couldn’t have asked for a better day. The atmosphere was amazing, the cars were incredible, but more than anything, it was the people. We met so many lovely people, had some brilliant conversations and served lots of cake and coffee along the way. This cause already meant a lot to us personally, which made being there today feel that little bit more special. Sometimes things don’t work out the way you thought they would and then you find yourself exactly where you were meant to be. A huge thank you to everyone who came over to the horsebox, bought something, stopped for a chat or simply said hello. And a massive well done to everyone behind Bang & Fuel for putting together such a fantastic event for such an important cause.
Today was one of those days that reminded me why I love doing this so much.

A little last minute addition to the diary
This Saturday you’ll find us at Bang & Fuel Charity Static Car Show & Family Fun Day at Rettendon Common and I’m so pleased we get to be part of this amazing event
They’ll be raising money for Prostate Cancer UK, a cause very close to our hearts

We’ll be there from 11am–4pm with the horsebox full of gluten free cakes, bakes and coffee.

Bit of a last-minute one!
We’ve unfortunately been let down for an event this Saturday 22nd August, which means The Phoenix Cake Company horsebox now has the day available.
We’re a fully gluten-free, coeliac-safe bakery & coffee horsebox, serving homemade cakes and bakes alongside barista coffee, iced drinks and more.
If anyone knows of any local events, markets, shows, family days or venues looking for a last-minute food/drink trader for Saturday, please give me a shout.
Happy to travel across Essex and surrounding areas for the right event.

I'm back from an amazing week away with my family and as well as making some lovely memories, it's given me a lot of time to think. A couple of years ago I genuinely couldn't see a way forward with my business and now I'm coming home excited to get back to it, full of ideas and realising just how far ive come. Eating out has actually been pretty good gluten-free, i take a lot of time to ring ahead to places before booking in but it's all the little things I've noticed. The beach kiosks. The ice cream stands. The fish and chip shops places where the kids and hubby can just grab a sausage roll, an ice cream or something quick because they're hungry.
For me, those options have been non-existent and I don't always want to find a restaurant, sit down and order a whole meal. Sometimes I just want to grab something and carry on with our day like everyone else but Instead of coming home frustrated by it, I'm coming home inspired full of ideas for the coming months! And god am I looking forward to Christmas!!!!

Today is all about getting ready for our family holiday.
The washing is on, the lists are getting ticked off, and I'm trying very hard not to leave everything until the last minute!
It's been such a busy few weeks with events, baking, coffees, website updates and planning for what's next, so a few days away with my favourite people is exactly what we need. The horsebox will be having a little rest too before we're back out serving coffee and cake at some fantastic events.

If you've been thinking about booking The Phoenix Cake Company for your event, I still have a handful of dates available for the rest of this year, and my 2027 diary is already filling up. Whether it's a wedding, corporate event, birthday or festival, I'd love to be part of it.
