A new dish for the week ahead.

Cockerham Saltmarsh lamb shoulder, slow-braised in katsu spices and lamb stock, bound with fine herbs and lemon zest, then delicately crisped.

Finished with mint oil, sweet-and-sour pickled summer vegetables, a soft hen's egg and an intense lamb jus made from the cooking juices.

Rich, fragrant and deeply satisfying, yet lifted by freshness throughout.
