We’re after someone reliable, hard-working, and ready to get stuck in during busy services.

Experience is a bonus but not essential — attitude matters more!

Cinco de Mayo marks Mexico’s victory at the Battle of Puebla in 1862 — a story of resilience, pride, and cultural identity. For us, it’s a moment to honour the roots behind the bold, rich dishes we serve every day. 🇲🇽

Big on Birria 🌮🔥

Hi, I’m Gary — the face behind the food.

On 9th March 2026, I officially started this journey. We’re currently cooking out of our kitchen at The Ghost at The Feast in Chichester… and this is only the beginning.

It’s always been my dream to have my own place. I started out doing catering in college, but my love for food goes way back. When I was little, I used to tell my grandad I wanted to be a “cooker”… he looked at me and said, “gas or electric?” 😂

Since then, I’ve worked my way through kitchens, learning, growing, pushing myself — from the bottom all the way up to head chef, then executive chef… and now, business owner.

Alongside all of this, I’m also a dad to four amazing young kids and lucky enough to have a fiancée who supports me every step of the way. They’re a huge part of why I push so hard to make this dream a reality.

Big on Birria is built on passion, hard work, and a love for bold, authentic flavour. This is more than just food to me — it’s everything I’ve worked for.

Thank you to everyone supporting us so far. We’re just getting started 🌶️
