OCTOBER SPECIAL - TEXAS TOM’S STOCKYARD BURGER

We’re not quite sure how Texas Tom landed into our world, but we’re sure glad he did.

From the bbq pits of Texas to the burger grills of Essex, Tom brings a wealth of experience and a bag of vibes to our kitchens - This is the kind of guy that’ll happily bake you a cake to celebrate a big occasion.

Onto Tom’s Stockyard Burger. We challenged him to break all the Texas BBQ rules and he’s come back with a peppercorn based bbq sauce that absolutely slaps….

- 2 x Dry-Aged Patties
- Toms Stockyard Sauce
- Chilli Cheese
- American Cheese
- Pickles
- Raw Onion

In Tom’s own words…

‘I landed on The Stockyard Burger because it’s a nod to the historic Fort Worth Stockyards. They played a huge role in Texas’ cattle industry and became known for quality beef, it even gave Fort Worth the nickname ‘Cowtown’. Since I was born in Fort Worth and the sauce reflects the flavors of my culinary roots, I liked the idea of tying a bit of that history into the burger instead of just giving it a generic Western name.

Thinking about the name today, it just clicked. The burger has a lot going on, kind of like the cattle drive in the Stockyards. At first it’s almost overwhelming, where do you even start, but the more you look, the more you realize everything has it’s place’

What a guy.

Lots of slop around at the moment isn’t there?

We’re not just talking AI, we’re talking food too…

As more and more food businesses use the same AI templates to promote photos of food they’ve never cooked, it’s important to remember one of the last things you can’t buy on Amazon Prime - The taste and experience of having hot food cooked for you.

As for corporation takeaways? Between increasing overheads and impersonal business models we can all agree food wise the quality of our childhood favourites have gone downhill. Massively.

As the world becomes more formulaic we’ve fallen in love with the fact that every hand-made bun we use is as unique as the smash/cook on the burger from our Team.

Taste wise, our consistency is nailed.

Looks? We’ve grown to enjoy not caring (so) much…

Every photo on our instagram is food made for either a customer or a friend. Most are one-shot photos taken on a broken iPhone 11 when we have time. We’re not really sure we could sell ourselves to you any other way.

There’s a lot of crap in our industry. Our promise to you? We won’t be a part of it.

We believe that if a food business uses AI to produce images for their promotion, they can’t be too proud or confident in whatever they are making with their hands.

Trust in the real people, with real skills that lie behind the real independents - We’ll always try to look after you 😘

BURGER POPUP - SAT 26th SEPT - THIRST 🍔

That’s right crew, we are back at Thirst Drinks Syndicate on Saturday 26th to help celebrate PICKLEFEST.

Pickles you say? It’d be convenient if we currently had a pickle based special wouldn’t it - Fear not, the Two Brews ‘Pepperoni Pickleback’ collab special will be making the trip down with us for a one off appearance.

Shout out to everybody who’s rocked with us at our Thirst popups - So far we’ve served running clubs, groups of skaters, engagement parties and group socials whilst cooking for customers and staff from Thirst, Radio City Social, HOT BOX, The Ale House, The Railway Tavern Chelmsford and beyond - The vibes are strong and you lot are seriously cool 🤘

Special shouts to the security guard over the block of flats - We genuinely thought he was coming to tell us to turn the jungle down, turns out he was following the smell of burgers like everyone else 🫡

Please remember - This popup is accessible to everyone and fully open to the general public, catch us out back under the arches between 12 and 8pm slanging them smash burgs.

BURGER POPUP - SAT 22ND AUG 🍔

SO.. We didn’t really know how to break this one to you.

A couple of months ago, the lovely Dominique from the amazing Under The Arches Run Club asked us if we’d do a burger popup at her event, Run Fest, taking place at 🥁..Thirst Drinks Syndicate this Saturday.

Rather than ruin the fun of last weekend’s popup, we decided to keep it a surprise - We’re back at it at Thirst again THIS SATURDAY!

Missed out last week? Loved it so much you want round 2? Out on Saturday and want to catch a wave over some drinks and burgers?

We’re here for you.

We’ll be serving runners and the general public alike, so when we say we’re ‘running the popup back’ - We’re not lying 🏃‍♂️ 💨

Midday-8pm. Miss it, miss out 🍔

BURGER POP UP - AUGUST 15th 🍔

On Saturday 15th August we will be bringing Dry-Aged Smashburgers & Essex Bakery Brownies along to Thirst Drinks Syndicate down at the Chelsmford viaducts.

This popup had to happen -
Over the past year we’ve shared hundreds of Burgers and cocktails, business advice, a few tee’s, a million coffees and some drunken dance moves along the way.

Now we’re back bringing burgers to the streets, a late-Summer Saturday afternoon under the arches makes complete sense.

Cocktails, Beers and Burgs. 12-8pm.
