Beetroot Tartare

A celebration of beetroot — earthy, sweet and gently acidic, paired with the richness of confit egg yolk and the sharp, cooling heat of horseradish.

Finished with beer-pickled onions, mustard seed and a delicate potato tuile.

A dish built around contrast, but ultimately all about the beetroot.
