Mega sandwich making session! 🥪
Yesterday my team and I made 200 filled baguettes for an event at the Pencil Factory as part of a diy packed lunch buffet. The organisers asked for all of the sandwiches to be either vegan or vegetarian, so I had fun experimenting with some delicious new vegan fillings - tried, tested and approved! 😋👌

On the menu:

-Vegan BLT with sweet and smokey Aubergine 'bacon'
-Chickpea & hummus savoury with sundried tomatoes and olives
-Roast sweet potato with a cashew cheese sauce and balsamic drizzle
-Brie, cranberry and green apple
-Cheese savoury with carrot and spring onion
-Egg and cress mayonnaise

A Cumbrian themed buffet...

I was asked to provide a buffet lunch for an NHS recruitment open day with a Cumbrian foods theme.
With some helpful suggestions from born and bred Cumbrian family members, I put together a menu featuring some delicious local treats 😋

On the menu:

-Selection of finger sandwiches, including roast beef, cheese and westmorland chutney, smoked salmon and cream cheese and coronation chicken.
-Leek and cheese quiche
-Ullswater pie and mini pork pies (supplied by Cranstons because I know when I'm beat!!)
-Cumberland sausage sticky bites
-A selection of cheeses from Abbleby creamery
-Carrs crackers
-Chutneys and sauces from Hawkshead Relish Co and Claire's Handmade
-Sticky toffee puddings
-Kendal Mint Cake mint slice
-Grasmere Gingerbread
-Borrowdale Tea Bread
-Scones with jam and cream

Celebration lunch 🥳
The occasion: A 90th birthday
The celebration: a big extended family lunch! ❤️

I had the privilege of not only catering for this lunch, but also attending as a guest - which required me to jump into my transformation pod as soon as the buffet was lovingly laid out.

There were guest from 0 to 90 years old and a several dietary requirements to consider, and as a result, the menu was mostly gluten free, with many dairy free dishes too. I just love giving people the opportunity to properly enjoy a buffet despite having dietary restrictions!

On the menu:

Sausage rolls (regular and gf)
Quiche Lorraine (gf)
Roast vegetabke quiche (gf and df)

Being a mobile caterer means a lot of cooking in new and unfamiliar kitchens!
I cooked for a school residential at Knock Christian Centre in Appleby this week. A charming little spot and another kitchen to learn from scratch - but I soon got the hang of it and produced two tasty hot dinners for a lovely bunch of kids and staff.
Forgot to take one single picture of food though! 😂

I loved making Pizza for the loveliest bunch of ladies at Elim Church yesterday for their Little Steps' mum's social.
Freshly baked pizza, salads and fries...great company...great chat...a great night! ❤️

Cupcakes fit for a tiny princess 💕🌸
This week I made a special cupcake delivery to a new dad's workplace, to share a bit of joy with his colleagues after the safe arrival of his daughter.
What a lovely reason to eat cake!

Three salads and a smoked salmon platter to accompany a barbecue 😋🍔🌞
There must have been thousands of barbecue's last week, with a heatwave in the school holidays...and some delicious fresh salads take a barbecue to the next level!
These salads travelled in eco friendly palm leaf bowls and platters, along with the purple velvet cake, to a 40th birthday celebration barbecue. 💜

Salads:

-Classic potato salad with boiled eggs and chives
-Brocolli, apple and cashew salad
-Thai style curried peanut and vegetable noodle salad

The salmon platter included cherry tomatoes on the vine, cucumber, radish, avocado, pickled red onion and a lemon and black pepper cream cheese dip.

A purple & red velvet cake for a special birthday celebration!
I do LOVE a bit of colour, but I usually make quite neutral cakes - so this was a super fun change!
Red velvet cake filled with purple cream cheese icing, blueberry conserve and fresh blueberries and blackberries.
