This week's cake in the Spotlight is The Rocky Road -
There is a slight disagreement in history of whether the Americans invented this cake or the Australian's
The Australian Tail - The Gold Rush (1850s): Legend says confectioners during the Australian Gold Rush mixed damaged or spoiled sweets and chocolates—which had survived long boat trips from Europe and rough tracks to the goldfields—with local nuts and cheap chocolate.
The American Tale - They named it Rocky Road after the Wall Street Crash of 1929 to give people a cheap, cheerful treat during hard economic times. (Fentons Creamery in Oakland also claims a local confectioner named George Farren inspired the mix).
In Britain, rocky road evolved into a no-bake fridge cake or traybake made with melted chocolate, crushed biscuits (like digestives), and marshmallows, sharing close ties with traditional British tiffin.
All we know is it's delicious and in our cake window today 😘
