Six Fridays in, and we are learning that building TINO’S is about much more than making pizza.

From consistency and equipment to social media, conversations, and figuring out what comes next, here are a few things I didn’t expect.

Friday. We opened at 5 and sold out at 7:15 nearly double the amount of pizzas we usually do in half the amount of time. Dough rising too fast from the heat. Dough sticking on the first cooks slide 3, new space, figuring out how people get served to the table. Every constraint taught us something.

And they all pointed to the same thing what we really want from Tino’s is to see the people.

How many showed up. How many new friends we’ve made. That’s what matters.

Grateful for the The waggon kitchen that made that possible.

Big news and an order update!

This Friday, TINO’S is at the Wagon & Horses in Milton.

We’re saying goodbye to timeslots. No more pre-ordering in advance. Just turn up, scan the QR code at your table, and the pizza comes to you when it’s ready.

No app to download, no booking needed. Come down, order and have a pint.

Friday from 5:00 to 8:30. See you there.
