This is a dish that perfectly captures spring, Beautiful spring hogget, wild garlic, White Asparagus from the Loire valley & Scottish morels

On our Signature wine pairing, Paride Iaretti, Pietro Gattinara (Piedmont, 2015). A complex and savoury, earth driven red with mushroom and truffle and a soft raspberry finish.

On our Discovery wine pairing, Simpson’s Wine Estate, Rabbit Hole Pinot Noir (Kent, 2024). Bright and fresh with an abundance of wild strawberry and strawberry leaf, soft mint and forest floor on the finish.

The last of the season’s Yorkshire rhubarb…

With ginger & honey cake, custard, pickled ginger & crème fraiche sorbet - our current pre-dessert.

Paired with the super refreshing Akashi-Tai, sparkling Sake on our discovery flight and Dreissigacker Riesling Auslese on our signature flight - from one of Rheinhessen’s most renowned sites.

We are already looking forward to next year’s harvest!

Royal Anjou Squab Pigeon, blood orange, sand carrot, rose harissa

Our current main course…

Anjou pigeon roasted on the crown and smoked over coal & pine needles brushed in rose harissa glaze. Served with Medjool date ketchup, charred sand carrot, spiced sand carrot puree and smoked yoghurt. On the side our hand laminated brioche glazed in blood orange nappage and a parfait of pigeon liver.

To go with, we’re pouring…

On our signature wine flight, Tamerán Listán Negro (Gran Canaria, 2023). A volcanic island red with bright red fruit, subtle spice, and a fresh, mineral-driven finish.

On our discovery flight, Bedoba Saperavi (Georgia, 2022). A rich, dark-fruited wine with notes of blackberry, spice, and earthy depth.
