A hybrid taster menu celebrating local produce, located at the former home of Lord Snowdon, Plas Dinas Country House, North Wales. The Gunroom Restaurant at Plas Dinas Country House is a multi-award-winning restaurant in Caernarfon, North Wales. The restaurant is featured in the Michelin Guide and was awarded Best Place to Eat and Best Hotel at the Visit Wales National Awards 2025. The fine dining restaurant is headed up by Head Chef and TV personality Daniel ap Geraint, a finalist on Great British Menu 2025. Plas Dinas Country House is the former home of Lord Snowdon, husband of HRH Princess Margaret. It was awarded AA Restaurant with Rooms of the Year in Wales 2025 and held a Times Top 100 Places To Stay 2025. The monthly changing menu uses only the freshest seasonal and locally sourced ingredients. Distinct choices of starter, main and dessert are interspersed with delicious chef choice courses creating a unique dining experience that balances sumptuous indulgence with individual variety. Dinner at the Gunroom Restaurant is served daily between the months of April & October and Monday to Saturday from November to March. We kindly ask that you arrive half an hour before so you can enjoy a pre-dinner drink and canapés in either the beautiful Drawing Room. Our Quintessentially British Afternoon Tea is served Tuesday - Sunday in various settings throughout the house with a choice of unique tea blends, delicious homemade cakes and dainty savouries. You will feel relaxed yet indulged from the moment you walk in.

Today is our 7th Anniversary. At 12pm on 2nd September 2019 we took over the business, that same day welcoming guests to Plas Dinas Country House.

Over the last 7 years we have transformed the beautiful country house, alongside our team to create the beautiful, historic Welsh country house and foodie destination that you see today. It has not been a smooth ride and let's be honest, times are still incredibly tough, but there are not many companies in the UK or indeed the World that didn't suffer as a result of the many situations that the world has faced during those 7 years and are indeed still facing. There are so many things we want to do, to achieve, to develop here and love Plas Dinas Country House as much as we did when we first visited.

We have made many wonderful memories here and formed so many friendships with our guests.

We chose to use the time during the covid closures to get to know the story of the Armstrong-Jones family and indeed Lord Snowdon and HRH Princess Margaret and we are honest in the fact we wouldn't be what we are today without this time to really get to know the building. The family have been so incredibly loving and supportive since we purchased the business, and their time has resulted in much more detailed knowledge and understanding to not just create rooms, but to really bring to life the person they represent and how the house was indeed used.

We now have 11 individually designed bedrooms, upgraded public areas and have developed the gardens that features the most beautiful pagoda and small vineyard.
We have also been lucky enough to work on so many wonderful weddings and events over the last 7 years, making memories with couples from all over the world and have a wonderful wedding this weekend to look forward too. Each wedding individually designed to tell their own story just like our hotel designs.

We live and love our beautiful country house and day to day are so busy that you rarely get the opportunity to reflect. As we approached our 7th Anniversary it has certainly been a time to take in just what we have managed to achieve over the last few years. We could not have done this without the incredible team that we have the pleasure of working with, side by side, our Plas Dinas family or you our guests, new friends and the local community who have been so incredible.

Looking back at just a few of our highlights:
⭐We were awarded The Good Hotel Guide Cesar Award for Best Hotel in Wales 2026
⭐We retained our 5* AA status and multiple rosettes
⭐We were awarded AA Restaurant With Rooms of the Year in Wales 2025
⭐ Winner of The North Wales Tourism Hotel of the Year for 2024, 2023, 2022 and 2021 and Best Place To Eat 2024 at the Go North Wales Tourism Awards. The North Wales Tourism Awards will always mean a great deal to us and in fact Annie is now an advisor to the board of directors.
⭐Visit Wales Best Hotel and Best Place to Eat in Wales 2025
⭐We redesigned Sir Robert Armstrong-Jones bedroom and Lady Armstrong-Jones's bathroom, bringing together another love story once again.
⭐We were added the Condé Nast Johansens Global Collection of Luxury Hotels, Venues and Spas and went on to be awarded Best for Romance in the UK 2025
⭐We designed and hosted many wonderful wedding and events.
⭐We have the largest known Welsh w**e collection and were awarded the prestigious Notable W**e List Award for Wales 2024 by AA Hospitality and have retained our notable status .
⭐We supported Head Chef Daniel ap Geraint on his Great British Menu journey where he won the Wales week 2025 and went on to achieve 2nd in the finals for starter and joint 3rd on mains.
⭐ We planted the start of our vineyard with the support of Gwinllan Conwy and continued the development of our kitchen garden to support sustainability.
⭐We were added to The Times Top 100 Places to Stay 2025 list.
⭐I think the biggest thing, and something we are so incredibly proud of is being added to the MICHELIN Guide in April 2022 and since retaining our space to this day. Our team work so incredibly hard and we are proud of each and every one of them. The progress in the kitchen is remarkable. It is an exciting period for the Gunroom Restaurant and we cannot wait to see the progress over the next 12 months.

To be listed in the monthly MICHELIN Guide Newsletter as one of the top 5 new additions in April 2022 was a moment we will never forget but the progress since is truly remarkable. Our team of chefs are ambitious, creative and determined to deliver exceptional dining. A team that are pushing and pushing each month to create the most wonderful menus for our guests. We welcomed Kane to our team in April 2025, the magic that comes from the whole kitchen is amazing, the team are so driven and determined. We wish the team all the best with their MICHELIN and rosette aspirations. We will do all we can to support you.

We truly cannot thank everyone enough for supporting our chapter here. Our team, our guests, our local community and indeed the Armstrong-Jones family.

Well what a summer! Goodness we have welcomed so many fabulous guests from across the globe and it has been such a joy to share our beautiful country house with you all.

It is however time to welcome our September and October menu! It is all change in the kitchen once again as we welcome this delicious collection of dishes to the estate. Head Chef Daniel ap Geraint has been working his magic on our absolutely delicious bi-monthly changing menu alongside his team of ambitious chefs.

The guys are busy preparing for another season of mouth-watering, delicious dishes using only the best in seasonal ingredients.

We believe each stay should be entirely unique. With 11 individually designed rooms to choose from, a bi-monthly changing menu at The Gunroom Restaurant and a seasonal Afternoon Tea menu to indulge in, historic 5* Plas Dinas Country House is the perfect place to escape for relaxation and a truly memorable experience here in North Wales.

Our beautiful Princess Margaret Junior Suite offers an elegant, relaxing space surrounded by British Royal Family memorabilia.

We particularly love to share some of the official wedding gifts from HRH Princess Margaret and Lord Snowdon's wedding that feature in this room.

The Chardonnay vines are growing tremendously well this year with lots of grapes, so many in fact that we have started to thin them out and have collected some for the kitchen.

Chef Kane will be turning these unripened grapes in to our very own verjus to be used here in The Gunroom Restaurant.

Did you know that we have our own vineyard here at Plas Dinas Country House? It features Chardonnay and Phoenix vines that commenced their journey in the walled garden back in 2022.

Daniel has worked incredibly hard to develop the vineyard with the support of Colin and Charlotte from Gwinllan Conwy. Daniel is obsessed about w**es and it was his desire to produce our very own w**e one day. The work he puts into this each week on top of everything else he manages is now being rewarded with the most beautiful grapes.

We hope to have w**e made using our own grapes next year, but currently our talented team of chefs make use of the vine pruning's to smoke the butter in our restaurant.

The team are a huge part of what makes Plas Dinas so very special. Many of us work across multiple departments and you will find individuals tending to the plant hospital, the vines in the walled garden, helping paint along the estate or simply talking to our guests about the history or how much they love Plas Dinas. It is a place of magic and we truly love it. We are so grateful to everyone that supports our independent business.

Here at The Gunroom Restaurant, attention to detail is of great importance, as is the exceptional flavour that Daniel Ap Geraint and his creative team of chefs produce throughout the year.

Each ingredient, each mouthful, each hidden course is carefully considered, providing a hybrid 9-course taster menu, unique fine dining experience here in North Wales. Our current menu is with us until 31st August.

We are located just 10 minutes from the Menai Strait. It is a stunning stretch of water filled to the brim with quality produce, such as sea bass, oysters, mussels and sea salt which we regularly showcase here in The Gunroom Restaurant.

We love collecting our fresh catch of Menai oysters later. They are simply divine and going down a treat on our current menu which is available throughout July and August!

Introducing Daniel Ap Geraint, our Head Chef behind The Gunroom Restaurant, Caernarfon. He heads up our talented team of chefs and creates the insanely beautiful bi-monthly changing menu that we get to share with you throughout the year. The journey the team are currently on is amazing to watch.

Daniel has been with us from the start and was a finalist on Great British Menu in 2025. Winning each night of the Wales week courses, he went on to come second to Sally Abe in the starter and joint 3rd in the mains to Jean Delport.

Daniel is one of the nicest chefs we have ever worked with and we will do all we can to support him and his ambitious team on their culinary journey.
