Its a while since we visited Bury market on a Saturday! BUSY! We visited one of our old regulars Paul's greengrocers stall on the corner. He often has organic and unusual options. We left with two bag fulls for £8, Big fresh bunch of beetroot with leaves in tact, an unbelievably big bunch of fresh reddish complete with heathy greens in tact, 6 small courgettes, a bag of Jersey Royals.
This morning I tackled the treats:
Removed the beetroot leaves and thoroughly washed them discarding the baggy ones - still a panfull left. I cooked the leaves and the stalks separately to use later. Greens are good substitute for spinach, the stalks are sweeter similar to chard only much smaller.
Two dishes so far.
Next I took the very healthy looking reddish tops, when cooked they taste like strong rocket - made a lovely soup as in pic. Just a few added staples (a potato, an onion, and a stock cube) and that's lunch sorted today no seasoning required.
So mindfulness is required to eat the beetroot and reddish promptly as once the foilage has been removed they will start to wither a little.
Last night I made an adaption of ratatouille using a courgettes as a side to a jacket. Leaving me with 5 courgettes still to use.
All for little more than the cost of a couple of coffees.
