As a small business we sometimes face challenges that larger corporate companies can tackle by throwing money around or having a huge reserve pool of staff. Something we simply can't do and don't have.

The beauty of being a small independent is that we can delay opening the doors in a morning whilst we fix issues so we can continue to provide you an excellent level of service. We don't have a corporate management team overseeing our every move. We make our own decisions.

Some of these challenges can cause us a disruption in service and 99% of the time are unavoidable. We work tirelessly to keep our restaurant open and running smoothly but some days things out of our control hit us like a train and we would rather stay closed until we have a plan in place rather than open but not be able to provide you a continued level of excellent service or on a limited menu as stock hasn't arrived.

It doesn't happen very often so 99.9% of the time were open on time and raring to go but when we do face a challenge that we need to overcome we will keep the restaurant closed to do so.

This week has seen A-level results affect staffing and leave us unable to have the correct number of staff in site and separate to that, suppliers being unable to provide the normal level of stock, with some being unable to deliver at all leaving us no option but to delay opening whilst we travel ourselves to collect stock elsewhere.

A simple way to tell If we are open or not is - If our outdoor furniture is not outside and our OPEN sign is not illuminated, it means we are closed to the public. We always put our outdoor furniture and plants out to signify we are open for business. We have to keep our doors unlocked to receive deliveries and staff. Two of our biggest challenges are staff not showing up on time or at all and deliveries not arriving on time for us to open.

If you arrive at the restaurant and the sign is not illuminated and the furniture is not outside - please do not enter and expect to be seated. We may still be preparing the restaurant for guests and that means mopping/dusting/cleaning/restocking ect. Having a person down means we likely only have 1 staff available to complete those tasks and it takes twice as long to accomplish in the morning.

We would rather delay the opening time get our Restaurant ready to give you that excellent level of service you expect from us, than provide you a lesser experience. We can't be expected to provide a good service if we aren't ready to do so.

Today we're saying goodbye to our friend, major member of Team Lotus and Chef, Daiki. He's moving on to greener pastures and someday, you may see his name up in lights. He's got an amazing future ahead of him. We're so proud of him and the opportunity he's been given to expand his career.

Because of this, we're staying closed this morning to celebrate his future. We're celebrating him and giving him a good send off. We will be back to work later today
