So, why Kasi?

Kasi is the ancient name of the city now known as Varanasi, on the banks of the Ganges.

For centuries, people from across India came to its banks. Many stayed, forming communities and bringing their own cultures, traditions and kitchens with them.

Kasi became a place where India gathered. And there’s another reason this story feels particularly special to us.

As Careys Manor begins a new chapter with Sanraj Group, Kasi brings a little of their Indian heritage into the heart of the New Forest.

A restaurant inspired by a place where different parts of India have come together, created as part of a new chapter here in Brockenhurst.

And soon, we’ll be opening the doors. 🌶️

It all begins with the river.

For centuries, the Ganges has flowed through Indian life, connecting regions, communities and traditions along the way.

It begins where two streams meet. As it travels, more rivers join it, each bringing its own colour and current. They aren’t lost. They become part of something bigger.

Indian cuisine has evolved in much the same way. Ancient in its roots, rich in its journey and constantly evolving.

And that idea sits at the heart of Kasi.

Where Hampshire produce meets the flavours of India 🐟

Chef Jolly recently paid a visit to Chalk Stream to see where some of the local produce behind Kasi begins.

Raised in the chalk-stream waters of Hampshire, ChalkStream trout is grown just a short distance from us – and will be making its way onto the menu at Kasi.

While the inspiration for our food travels along the Ganges, from the Himalayas to the Bay of Bengal, what grows and is produced right here on our doorstep is just as important.

For Chef Jolly, Kasi is about bringing the two together: the flavours and techniques of India with some of the very best local and seasonal ingredients Hampshire has to offer.

Meet the man behind Kasi: Chef Jolly

With more than three decades in hospitality, Chef Jolly has taken his love of Indian cooking around the world, from Mumbai and Singapore to Doha, the Maldives and aboard Cunard’s Queen Anne.

He’s been a judge on MasterChef India, is a Chef Juror at the International Taste Institute in Brussels and, closer to home, is behind The Great Indian in Finsbury Park.
Now, his next chapter is taking him to the New Forest.

At Kasi, Chef Jolly is bringing together the flavours and cooking traditions found along the Ganges with exceptional produce from Hampshire and across the British Isles.
