Layers of pure dessert heaven! Think buttery crumbly biscuit base, silky dulche de leche caramel, chocolate cremoux, banana custard, whipped cream, grated chocolate and fresh bananas. We’ve been busy in the kitchen whipping up this absolute classic for R&D for our future home. We will be serving this alongside a peanut butter ice cream.

Nothing beats a big boy steak that melts like butter. Hard seared with a perfect edge to edge cook. This bone in sirlion is a summer favourite of ours. Served with grated cured duck yolk, chimichurri and balsamic glazed roasted shallots for a fantastic summer sharing plate. When we have secured a location for our pop up, we may sell these with all the sides, and in Woolly Pig style, they will of course, be over the top.

The Woolly Pig is owned and operated by two fine dining modernist chefs with a collective 31 years of experience, who want to cater towards the requirements of our future customers . We will do this by offering a pub friendly menu that promotes value for money with a rolling menu structure with global influences. In addition to a Sunday Roast menu that promotes value for money, quality and consistency.

We are looking to open in the Brighton and Hove, UK, area, but also looking in the surrounding areas. We are available to start within 4 weeks, and have a full business proposal that we can send via email to any owners or managers of a pub who are interested in working with us.

We love to go over the top! So here is one of our Sunday special desserts, Dulche de leche and cherry cheesecake.

A biscoff biscuit base with a dulche de leche cheesecake custard. Topped with a cherry compote, fresh cherries, pistachios and white chocolate shavings.
