Introducing our incredible General Manager of The Seahorse, Hettie!

Hettie started out in hospitality at 16, working in a small town pub helping out the chef. She quickly moved up to work behind the bar where her ability to make people feel at home and looked after really shone through. Hettie then moved into the Social Care Sector, working with young, vulnerable people, for 10 years. Deciding to take a little break, she jumped back into pulling pints and quickly fell in love with being a ‘pub mum’. From there her hospitality career flourished and Portobello quickly snapped her up as Assistant Manager for the Lion & Lobster. Last year she was ready to take on a more challenging role and we were thrilled that she accepted her new role as GM for The Seahorse. Hettie is an absolute gift when it comes to managing people’s special days, looking after a busy venue and being a fabulous and caring host - we’re so pleased she is a part of the Portobello team, and we can’t wait for you to meet her!

Introducing our Head Chef, Lewis!

Lewis has had an incredible career, spanning over 20 years in a variety of successful and sought-after venues; from the Groucho Club, Bibenden restaurant to Charlotte Street Hotel and Greens Cornhill. 

Lewis and his family decided to make the move to Brighton to be by the sea, and we’re so pleased they did as having him as a part of the Portobello family has been an absolute joy.

Lewis began here as Sous Chef at The Walrus and, once a position became available for our new venture, The Seahorse, we knew Lewis was the perfect fit. 
His passion and creativity shines through in every dish he creates, and his wicked smile is sure to bring a smile to your face too.

Lewis has curated a menu that changes seamlessly with the seasons, providing comfort and warmth in every dish. We can’t wait to share the menu with you soon 🤗

So, let’s give a warm welcome to our Head Chef Lewis and we look forward to you all meeting him soon.
