Since Amarillo closed I haven’t had too much to chat with you all about, but there has been lots of things happening behind the scenes.
After some huge life choices I decided to try a new career working for a well know US credit card company, but after a short time realised that my love for cooking was way too strong. The relentlessness of creativity was gone, the freedom of expression taken away and truly missed the beauty of bringing people closer together through hospitality; I had to go back!
After a short stint working for a truly awful restaurant business I met Ali and Mo, the owners of and and straight away loved their ambition, drive but also kindness to their team. This was a business that was doing great and run with such a high regard for their employees welfare at the same time, so even though I had very little interest or knowledge in Mexican food, decided to join the team.
What a rollercoaster it’s been and now feel I’ve not only made a new family, but we are now opening our new restaurant together . Just to make it even my special, I couldn’t be happier to announce that my wonderful fiancé (described by many as a front of house weapon 🤣) will be managing the front of house, taking very special care of you all.
Please follow our new venture and I cannot wait to welcome many of you wonderful people to our Spanish influenced tapas restaurant on Bond Street, Brighton.

***FOH POSITION***

Our current and long term manager Mr Beggs is stepping back from the service side of things to pursue his craft as a blacksmith on a full time basis. So shoes need filling.

Our set up is not the normal and we like it that way so if the below details interest you please send a CV to [email protected] and we can go from there and meet up, have a chat and see if you’re a good fit.

- Management experience necessary
- 3 weeks of on the job training before taking the helm.
- 3 day week (Wednesday - Friday)
- 30 hour week (20-22 service and the rest admin)
- 30 days holiday
- We close for a winter and summer break.
- Weekends off (apart from 6-8 Saturdays a year)
- Competitive salary/hourly wage (happy to discuss based on experience)
- £500/£600 tips a month
- Staff food
- Staff drinks

Need to be nice, driven, hard working, a team player and above all else extremely passionate about food and drink. Full commitment a necessity to help push this project forward with us. If unsure please don’t apply.

Last week I was lucky enough to visit at his new residence as head chef .
What beautiful moment! Not only to stay at such a stunning hotel with the most friendly staff, but to eat the food of my true protégé, which was truly stunning.
Incredibly balanced flavours, using the best ingredients, cooked simply with such flair. The technical perspective was off the charts due to both Aarons leadership as well as his team including and .warne
It was such a proud moment and to enjoy this with my daughter made this the most special moment.

Meet Paul

Without this man there would never have been Amarillo Restaurant.

Without his tireless work behind the scenes, incredible positive energy and support I could never have done what I had always dreamed of doing: opening my own restaurant.

This man gave me all the tools to be the person, professionally and emotionally that I am today, he built me up when I was down and spurred me on to be better.

This is my dad and I hope to be half the man he is one day!

It’s been an incredible journey and I’m so grateful to have done it with these people! You will be in my heart always 🥰🥰

I would like to thank everyone who supported us (you know who you are 😉), especially and who made this venture into a reality.

Our final service will be Saturday 20th August and then I hang my apron.

Amarillo Restaurant is looking for a chef to join its great little team. Working along side Ian Swainson, the only chef in Brighton to earn a Michelin star.
This I great opportunity to learn about food while earning a good salary, in a fun and happy team.
Tuesday to Sunday, dinners only, we serve tasting menus with a nod to fine dining European food.
Salary will be discussed on CV experience

Availability from the end on the month but am happy to wait for the right candidate.
