Some dishes are worth travelling for. Khao Soi is one of them.

If you have ever been to Chiang Mai, you will understand why this Northern Thai curry noodle soup stays in people’s memory long after the trip ends.

For me, it is a bowl I grew up with in Northern Thailand, which is why it has always had a place at the table.

The broth is rich with coconut curry, turmeric and gentle spice. Soft egg noodles sit underneath, while crispy noodles on top give Khao Soi the texture that makes it instantly recognisable.

Then come the ingredients that change the whole bowl: fresh lime, shallots, pickled mustard greens and chili oil. Each spoon tastes slightly different, which is exactly why people keep craving it.

That balance of comfort, brightness, texture and heat is what makes Khao Soi one of the most loved dishes in Northern Thai food.

I’ve had so many people asking about Thai cooking classes lately, and it’s something very close to my heart. Teaching was a big part of my background before I got swept up in building and running kitchens, and honestly, I’ve really missed it.

So I’m bringing it back. Namo Cook is coming soon for team building, private events, birthdays, celebrations, and group bookings. It will be held at Namo, 24 Ship Street, our home.
