Following a couple of conflicting/confusing articles in the Burton mail, we would like to clarify the plans for The Old Vicarage.

Pascal and Karen Arnoux are happy to announce that they have come to an agreement with a local Burton educational charity called Eagle’s Nest for the rent with a view to purchase The Old Vicarage.

Therefore Pascal, Karen and Eagle’s Nest applied for and have been granted change of use from a restaurant to a daytime education facility.

This charity does outstanding work and offers educational packages that are dedicated to helping the most vulnerable young people in society. They work with 11-18 year olds who are unable to engage effectively with mainstream education as a result of social, emotional and mental health issues due to past experiences. This charity has a great vision and great plans for the building and for the children.

Pascal and Karen Arnoux are delighted that the building is being put to good use and will look forward to supporting and working with this excellent charity in the coming years.

Ollie

Our son started pot-washing at the Vicarage aged 13 to earn his ‘pocket money’ and after 3 years we allowed him out the front to help with waiting on. It quickly became obvious he loved the industry! Once in 6th form at JT he started helping us more and more with our marketing and any technical stuff we couldn’t manage (youngsters are good at that!)

When at University studying he travelled home every weekend to help us in the restaurant (and stock up his fridge for uni obviously) and even after graduating, worked front of house whilst working in the NHS.

Since Covid struck and everything became more difficult, he has been particularly supportive and we will be forever grateful for everything he’s done for us both.

‘Keep making us laugh Ollie’ and enjoy ‘the rest’ don’t do too much overtime at the hospital.

Jamie Selvey

Jamie (or as all of our staff call you ‘Goggles’), you joined us early in 2019 whilst you were at college studying catering whilst also working at a local café in town. You started off by serving canapes and drying glasses and quickly progressed post pandemic to a full-time waiter.

You are such a lovely young man and our customers absolutely adore you. You will always go the extra mile to ensure our customers are happy (we actually had to teach him how to say NO to customers sometimes!!).

You’ve progressed so much in the past year, you can now do every aspect of front of house service and we’ve really seen how much of a talented waiter you are! You never complain and no job is ever too much for you and we are so grateful for how much you have helped.

You have been so loyal and supportive during the past couple of years and we will forever be grateful for that. You have such a great sense of humour and can endure the chefs and Ollie’s (our son) banter.

We wish you all the best in the future and we are sure you will go on to achieve amazing things!

Cory Gooding

Cory has worked with us from an apprentice and worked his way up with us. Cory has so much experience in the hospitality industry, Cory has worked in rosette and Michelin starred restaurants and is such a talented chef. Cory took a break from the hospitality industry and then came back to us as a freelance chef last year and we are so grateful for your support in the last year!

Cory, you are such a talented chef and you can literally turn your hand to any area of the kitchen and you will often help out on every section of the kitchen during your shifts with us. Your eye for presentation and your creations are incredible and highlights just how talented you are.

We know you are uncertain whether you remain in the hospitality industry long term, but what we know, is that you have the talent and potential to be an excellent chef and if you do leave the industry, you will be sorely missed! We are so grateful for you supporting us during the past year and working so many shifts to enable us to continue to trade at our full potential. We wish you all the best in the future!

Dan Shill (senior Chef de Partie)

Dan has worked with us since he was at secondary school. Dan started off by pot washing and then went to catering college where we took you on as an apprentice and saw you develop into a commis chef and then chef de partie. You spread your wings and worked at The Dial, before returning to us as senior chef de partie in 2018.

Dan you are such a well-rounded chef and can work in any area of the kitchen. You have been such a hard worker throughout the years. You are extremely talented and have such a passion for the industry that really shows. We do apologise for how many times you have had to cook scallops in your career, its one of our best-selling starters and Dan has been running our starter section this year and we must sell at least 30 portions a day!

Your sense of humour and happiness is infectious in the kitchen, and we can always rely on you to brighten our days with your witty one liners. You are such a kind and thoughtful individual who has been so loyal to us over the years, and we are so happy to see you blossoming.

We are delighted that you will be joining James at The Bay Tree as sous chef, where we are sure you will continue to excel at everything you turn your hand to. We wish you all the best in the future!

James Batley (Senior Sous Chef)

James has worked for us for most of his career. We have seen him develop from a young commis chef to the calm and immensely talented senior sous chef you are now.

James has such an eye for presentation, and he is the creative spark who has made our food look so beautiful over the years. James has really upped his game in past couple of years and takes on so much responsibility in our kitchen. Your ordering skills are incredible and the way you utilise food to reduce waste is incredible.

James is such a kind and caring individual who truly loves the hospitality industry and the hospitality industry is such a better place for you being in it! You are such a loyal individual and have stuck with us and supported us during some difficult periods and we will forever be grateful for your support.

We are delighted that James will be progressing to the next step in his career from when we close and will become the Head chef at The Bay Tree in Melbourne which is owned by our long-time friend Rex. We will certainly be regular diners there!

Anthony Poole (Head Chef)

Tony joined us in 2019 and quickly cemented his place in our kitchen team as a talented and reliable chef! Tony became our head chef in 2021 and we are so grateful for all of his help.

Tony is undoubtably a fantastic chef and we wish we would have found him sooner! He is such a well-rounded head chef, he has the management side down to a tee, his stock keeping is efficient, he has actually increased our profit margins since taking over as head chef, despite inflationary pressures!!

Tony is such a lovely guy and is a breath of fresh of air in the hospitality industry. He is calm and thoughtful and will always go the extra mile to ensure customers, staff and we are happy. The taste of his food is superb, and he can deal with busy services without panicking despite short staffing. We will miss your awful dad jokes every day!

Tony will never truly know how much he means to us and how grateful we are for his support over the past couple of years, you are such an amazing person and chef, and we wish you and your family all of the best in the future. We will be visiting any restaurant you work! Good luck at San Giovanni!
