A play on curd and rice widely eaten in several parts of India. This dish has several techniques to bring the flavours for the butter poached scallop, thinly sliced and wrapped around boiled rice as if like 'sushi', fermented gooseberries & green chilly chutney to resemble flavours of Japanese yuzu kosho, cultured buttermilk sauce split with mint oil.

Complexity of techniques & balance of flavours. In the concept roast scallop was preferred but in reality poached scallop made a huge difference. The tempered buttermilk, mild chilli, dressed rice & chutney add to the complexity yet simplicity of this dish.
