Local spring honey available from our hives in Blyth and Morpeth!
The spring honey this year is soft set honey.
It’s thick, creamy and tastes of sunshine.
Why soft set?
This is because the local farmers fields of oil seed r**e have been successful this year (the yellow fields).
OSR (oil seed r**e) has a very high glucose to fructose ratio. Honey is naturally super saturated in sugars, when the glucose ratio is high this causes the honey to crystallise really fast creating a very hard honey.
It’s a royal pain!
To combat this crystallisation we cream the honey breaking down these larger sugar molecules to create a thick smooth honey.
Perfect on toast, in a cuppa etc etc
We heard you wanted options on jar sizes too, so we’ve obliged.
Large jars (340g) are £9
