涼瓜牛肉飯，係夏天特別受歡迎嘅一道家常菜。

每年夏天正正就係涼瓜當造嘅日子。最近我哋收到一批新鮮涼瓜，果身厚實飽滿，顏色翠綠，正正就係香港人熟悉嘅廣東苦瓜。呢種苦瓜肉厚又爽脆，帶有獨特嘅甘苦味，特別適合用嚟炒牛肉。

有人第一次食會覺得苦，但鍾意食涼瓜嘅人都知道，涼瓜最吸引嘅地方正正就係呢種微微甘苦。入口先感受到淡淡苦味，慢慢又會帶出回甘，越食越有層次。

我哋選用新鮮涼瓜，炒到保持爽脆口感，唔會過腍。配上鮮嫩牛肉，再加入豉汁一齊快炒，牛肉吸收咗豉汁既香味，而涼瓜既甘香又剛好平衡咗醬汁既濃郁。

牛肉嫩滑，涼瓜爽脆，豉汁鹹香惹味，配埋熱辣辣既白飯，每一啖都係簡單而實在既家常味道。

對好多香港人嚟講，涼瓜牛肉飯未必係最華麗既菜式，卻係茶餐廳同屋企飯桌上經常出現既熟悉味道。
