In our ‘What’s In My Dabba?’ series, we get a glimpse into some of our friends’ kitchens, as they share the judicious spicing of their favourite dishes, along with hosting rituals, tips and stories.

This month, Rez Rahman, of globe-trotting supper club Roti Mami (.mami), recalls fondest childhood memories in her Grandma’s East London kitchen, along with discerning tips for carefully harnessing spices and best advice on generous hosting.

Rez also shares a tempting recipe for Chilli Cheese Parathas, loved deeply by friends and family alike. Peruse the interview at your leisure and try the recipe for yourself via the link in bio.

This month, we join Rege Batchu (), the chef behind beloved recipe hub Bad and Bhaji – home to all manner of glorious Punjabi dishes, lovingly passed down.

Rege tenderly recollects early food memories, his Mama-ji central to each rhythm and ritual: Smoking ghee. Fresh herbs perfuming countertops. Pressure cookers joyfully whistling. Along with revealing tips for saving over-salted dishes and expertly blooming (not burning) spices. He also shares a comforting recipe for warmly spiced Butternut Squash Sabji.

What if we spent more time enjoying time? Unbridled moments of beautiful things, much like the care, attentiveness and love that goes into making a slow, rich cup of chai. This weekend, wander over to to do exactly that with . The wonderful team has taken over the iconic space on Chiltern Street, to create beautiful moments that invite you to waste time, deliciously.

This poem I wrote was the inspiration behind my Chai Pe Charcha which took place here yesterday morning—I cannot express how much fun it was!

Step outside and it hits you. That thick, heavy air. The kind that makes you move just a little bit slower, seeking out the shady side of the street. It’s a heat that feels fiercely familiar- more than a little bit like a sweltering, mid-afternoon in Bombay.

Swing on by to the cool, shaded sanctuary of any Dishoom café, pull up a chair, and let us revive you with the ultimate, time-honoured antidote:

Mango Kulfi - Satin-smooth, sweet real mango.
Pistachio Kulfi - Creamy, proper pistachio.
Malai Kulfi - The champion, with a gentle hint of caramel.

Step inside, find comfort in the cool, and let a kulfi work its magic.

This Christmas for the first time we are glad to offer a wide-ranging collection of products that we hope many of you will love giving (and, ideally, receiving!). Kindly visit store.dishoom.com to order – we highly recommend getting your orders in today, to avoid disappointment.⁣
⁣
Our eccentric, charming cookery book and highly subjective guide to Bombay caters to many audiences, from the resident chef-walla in your home, to would-be travellers.⁣
⁣
For someone that really deserves a drink, the store is well stocked (let's face it, a lot of us deserve one!). The Permit Room Collection consists of a trio of favourite tipples – Sonia's Negroni, Permit Room Old-Fashioned and India Gimlet – in a most covetable gift set. Each tipple may also be purchased individually in generous 200ml serves. Also on offer is a sixer of delectable Dishoom IPA, if cocktails aren't their thing.⁣
⁣
For that person who really misses sitting in Dishoom with a glass of warm Chai, we recommend "Slip-Disc", our collection of Bombay-London grooves certain to help everyone unwind after Christmas dinner. Available in Vinyl or CD forms.⁣
⁣
For stocking fillers, Dishoom Coins are a wise choice, worth £10 each in our cafés and valid without expiry (ideal for after lockdown).

To mark our our 10th anniversary since the first Dishoom opened in Covent Garden this week, we've hatched a rather barmy plot.

After a bit of deliberating and some initiative-taking, we have elected to offer free Breakfast Naan Rolls (not just bacon and sausage, the vegan and humble egg variety also) to everyone that books a table for breakfast this week. Each person gets one Breakfast Naan – come every day if you wish.

All you have to do is reserve a table for breakfast from Monday to Friday this week. You must reserve, so that we can manage capacity and ensure distancing. Kindly book here: https://bit.ly/3j67wap

(If you already have a table for breakfast next week, simply wish us many happy returns to receive a free Breakfast Naan, too.)

After a long wait, we are thrilled to announce the official opening date for our brand-new home at One Chamberlain Square.

Dishoom Birmingham will officially open its doors on Thursday 6th August.

Before then, we'd love to invite the kind and patient people of Birmingham to help us prepare for the opening by attending the soft launch, which will run from Saturday 18th July until Wednesday 5th August. Online reservations for the soft launch period are open now for groups of up to six: https://bit.ly/2BQ20rt

During this important pre-opening training period, there'll be 50% off food at breakfast, lunch and dinner, so we hope you'll pay us a visit and eat and drink your way around the menu from Kejriwal to Keema Pau, Chilli Chicken to Chole Puri, and Bacon (or Egg) Naan Rolls to the very best Bloody (or Virgin) Marys. You absolutely must try our Birmingham Chef's Special of Mutton Chaap Korma.

There's been plenty going on behind the scenes to ready our newest café for your arrival. Our lovely, eager Birmingham team have been waiting in the wings and simply cannot wait to extend the warmest (and safest) welcome to you all.

After a strange and uncertain few months, we’re extremely happy to be firing up the stoves, brewing large pots of chai and warming up our welcomes so we can open our doors to you all!

Yesterday we announced the reopening dates of Dishooms around the country. Dishoom Birmingham (lovely, new!) was mid-way through its launch when the coronavirus shut us all down.

Dates and details of the soft launch, with 50% off food, will be shared very soon – do follow us here or join our newsletter to be among the first to find out: dishoom.com/newsletter/

Last week’s decision to close the restaurants to dining guests was difficult and deeply sad, for all of us. Since then, we've been absolutely blown away by the love, generosity and support you have shown to our team. From spreading the word of our burgeoning takeaway and delivery service, to offering to support us in any way possible, you all have been so big-hearted towards us. We won't forget it.

But, after a whirlwind weekend satisfying your Dishoom needs from afar, things have changed again. Today we looked at the world around us and at our wonderful team, and felt strongly that we needed to do more. So, as of now, we have halted all collection and delivery from our restaurants, so we can send our team home to stay safe and well with their loved ones. A socially distanced Dishoom family - but still a family nonetheless.

While the restaurants are closed and takeaway is off the table (so to speak), we offer solace in our cookery book, which is most certainly still available to order. May it bring Dishoom, joy and plenty of Daal to your home. From all of us, with love.

19/03/2020

In the past few days and weeks, coronavirus has blown our world apart. Last week already feels like a year ago, the present is unrecognisable, and the future is extremely uncertain. And the decisions we are faced with are incredibly tough.

We have arrived at a very sad, but inevitable and clear choice. As of today, all Dishooms are now closed to diners. This includes Dishoom Birmingham, where the launch (including soft launch) will be postponed. It feels like the right thing for us to do.

To do what we can for our guests, to keep as many of our team in work as possible, and to continue to support our charities, we are now offering both collection and delivery.

You will soon be able order and collect a takeaway from us from morning 'til late. And, if you live near Dishoom, you can order a delivery to your home. (Please note there is a ‘no-contact’ delivery option.) Please look out for further details of when this service will be available in Birmingham.

Our big-hearted, first-class team are as devastated by this situation as we are, and we’re working really hard to do the best that we can for them. It goes without saying that this will be incredibly challenging when our restaurants are closed and perhaps even for some time after that.

We are still struggling to understand a world with no restaurants in it. The industry that we’ve proudly been a part of for the past decade will likely be permanently changed. Most of our friends and neighbours have already closed, and we hope and pray that they will make it to the other side of this severe storm.

We'll be there too, on the other side, welcoming you with very big smiles, pots of chai and enormous warmth. It's going to take some doing and a fair wind behind us, but we'll be there, firing up the stoves, opening up the doors and waiting for you.

Until then, we sincerely wish you and your loved ones the best health and as much happiness as you can muster for the months ahead. Please look after one another. We can’t wait to see you on the other side.

With much love,
Shamil, Kavi & the Dishoom team
