The most easy & unreal STEAK STIR FRY 😍

Takes 15/20 mins MAX & is so convenient to throw it altogether. Not to mention it is sooo flavoursome!

(2 servings)

- 2 sirloin steaks
- 1 pack of β€˜rice & quinoa’ from Aldi
- 2 medium carrots
- Broccoli
- 3 baby corns
- 1 bell pepper
- whole sachet of sweet chilli & garlic sauce
- Tbsp Chinese 5 spice
- Tbsp Pumpkin seeds
- Spring onion & black sesame seeds to garnish
- Pepper to season
- Tsp of Butter & olive oil for cooking with

1. Start by roasting your broccoli, carrots, mini corns & peppers in the oven on 170 degrees, with a drizzle of olive oil. Leave to roast for 15/20 mins while you prepare the rest.
2. After 10 mins start frying your steak in butter to your own liking. Leave to rest in the pan once finished.
3. Once your veg is cooked throw it all into a pan with the pre cooked rice pack, pumpkin seeds, Chinese 5 spice, sweet chilli sauce & a season of pepper. Give it a mix together on a low heat.
4. Once all mixed serve into a dish with your steak cut on top into slices. Garnish with chopped spring onion & black sesame seeds.

- 250g cottage cheese
- 50g raw cacao
- 2 tbsp honey
- 2 eggs
- tbsp dark choc chips

Give it a good mix & get rid of any clumps, bake for 40 mins 170 degrees.

Raw cacao contains magnesium, iron, copper, zinc, protein & fibre which contributes to a healthy diet especially for our little ones who think they’re getting a brownie but it’s full of goodness πŸ˜πŸ™ŒπŸΌ win win

Creamy pesto chicken (also had Luca’s approval) 🀣😍

Such an easy comfort food dish & full of protein!

(Serves 3)
- 2 large chicken breasts
- tbsp oregano
- tbsp basil
- tbsp parsley
- tbsp garlic
- 2 tbsp red pesto
- 300ml milk
- tin of tomatoes
- handful of cherry tomatoes
- 1/2 red bell pepper
- quarter brown onion
- sprinkle of low fat grated cheese (optional)
- salt & pepper

Serve with flavoured rice & long stem broccoli πŸ‘πŸΌπŸ‘ŒπŸΌ

Chorizo Spanish chicken bake πŸ‘ŒπŸΌ

At just 370 cals per portion & full of flavours 😍πŸ‡ͺπŸ‡Έ

1 brown onion
1 red onion
500g new potatoes, cut into halves
Garlic
Tbsp pure virgin olive oil
8 tomatoes, quartered
75g chorizo
8 boneless chicken thighs
Tbsp smoked paprika
Tbsp dried oregano
1 courgette
1 pepper, deseeded and cut into strips
Low fat grated cheese
Salt & pepper

Preheat the oven to 200Β°C/Gas Mark 6. Put the onions, potatoes, garlic and tomatoes in a large roasting tin & season with salt & pepper. Toss everything together with a drizzle of olive oil and roast for 20 minutes.

While the vegetables are roasting cut up the chorizo and slice the chicken thighs slightly. Season all over with black pepper.

Take the roasting tin out of the oven, put the chicken thighs in the tray & scatter the chorizo over. Sprinkle with the paprika and oregano then toss altogether. Season with salt & pepper. Return to the oven for 20 minutes.

Take the tray out of the oven. Lift the tray a little so all the juices run to the opposite end, then spoon and drizzle the juices back over the chicken. Sprinkle the cheese over the top. Turn the oven up slightly & put the tray back in for another 10 minutes until everything is looking golden & the cheese is crisped.
