Poached Kentish cherries, meadowsweet cake and yoghurt sorbet.

We’ve had a few guests ask us what meadowsweet is. It’s a beautiful British wild herb that flowers throughout the summer, from June to September.

With naturally floral, vanilla and almond-like aromas, it pairs particularly well with cherries. 🍒

Chicken. Roast Sutton Hoo chicken, herb gnocchi, buttered peas, Scottish girolles.
Graham is absolutely loving these Sutton Hoo chickens. Grown traditionally and free range on Suffolk meadows for 25% longer than standard free range chickens, they are unbelievably flavoursome.
He has now created a second dish around this outstanding ingredient - and the Scottish Girolles from Keltic Sea Fare - that’s a similarly stunning symphony of classical flavours.

Instead of the herb gnocchi that was on last month, you’ll be enjoying more Sutton Hoo as he’s made a little chicken croquette.

At the moment, it’s Pineapple, but we’ll be serving a raft of flavours as the months go on, inspired by what’s in season - Blackcurrant leaf and Fig Leaf are next - or what was preserved when it was.
