Meet Lewis.

Last weekend was daunting. Everything was new, the restaurant had just opened, and like all of us, Lewis was understandably nervous.

This weekend was different. The Muddy Duck was his. He took control, led from the front and made it happen.

That’s what this partnership between The Muddy Duck and Smoking Lobster is all about. Giving great people the opportunity to grow and then trusting them to shine.

Lewis, what a fantastic weekend. Nobody deserved that moment more than you. We are incredibly proud of you and the whole team.

Post service, you may have caught Lewis enjoying a well-earned pint of Guinness. After the weekend he’d just had, nobody deserved it more.

Over the coming weeks we’ll be introducing you to every member of this incredible team, one by one. Together, they’re the people turning The Muddy Duck into something very special. 🦆🔥

Meet Balasz and Liam.

To the hundreds who have joined us this weekend and told us we’re onto something special, thank you!

We’ll take that kind of feedback every day of the week.

This post is about Balasz and Liam, but it’s also about the wider team around them. Over the coming weeks we’ll introduce you to the people building The Muddy Duck, one by one.

For now though, these two, alongside the rest of the kitchen team, absolutely delivered.

The food, the passion and the belief in what we’re trying to create here has been incredible.

The Muddy Duck.

There were moments when I genuinely didn’t think we’d get here.

Which is probably why today feels so strange.

Surreal. Exciting. Daunting. Rewarding. Slightly mad.

A mixture of emotions that’s difficult to put into words.

After months of planning, building, tasting, changing, testing, soft launches and countless conversations, today we finally open the doors.

Are we ready?

Are you ever really ready?

Opening a pub in 2026 feels slightly bonkers.

Three pubs close every single day in this country. Costs continue to rise, hospitality faces challenge after challenge, and yet here we are, opening one.

Why?

Because we love hospitality.

Not just the easy bits. All of it.

The graft. The pressure. The setbacks. The sleepless nights. The constant pursuit of making something just a little bit better every day.

And because we’re genuinely excited about what we’ve created.

What many people never see is just how hard it is to bring somewhere back to life.

The long days.

The sleepless nights.

The doubts.

The setbacks.

And none of it happens alone.

And the truth is, without Cinz and GC at Smoking Lobster, The Muddy Duck probably wouldn’t be opening its doors today.

What started as a friendship became an idea.

An idea that grew into plans, and plans that eventually became what stands in front of us today.

Together with Lewis, Balasz, Liam and so many others, we’ve built something we’re genuinely proud of.

Lewis has led the team here through the twists and turns. Balasz and Liam have helped shape the food and now lead a fantastic kitchen team.

And to Kate, Nick and everybody at The Menu Partners, thank you for everything you’ve done behind the scenes to help make today possible.

A huge thank you to every single person who has been part of this journey.

Everyone involved has poured an incredible amount of time, energy and heart into this project.

Without that friendship, support and shared belief, there’s every chance The Muddy Duck would still be closed today.

For that, I will always be grateful.

Two days.

Final prep. Last tweaks. Plenty of tasting.

Today’s lunch was Katsu Squash with Coconut Yoghurt Yellow Curry and Peanut Noodles.

Bloody delicious.

Different isn’t for everyone.

But we’re not here to be everyone else.

We’re here to add something new to an area already full of brilliant pubs and restaurants.

The more reasons people have to visit the area, the better for everyone.

After a week of soft launches, we’ve learnt something important.

The dishes that people keep talking about aren’t Sunday roasts.

They’re the plates shared across tables.
The seafood platters.
The surf & turf feasts.
The Japanese-inspired small plates that disappear almost as quickly as they arrive.

So we’ve decided to focus on what we do best.

The Muddy Duck isn’t trying to be every pub.

It’s a place to gather, share incredible food, order one more round and discover flavours you won’t find just anywhere.

Thank you to everyone who’s joined us so far and helped shape what comes next.

This is just the beginning.
