Our chicken main course on this weeks meat focused set menu!
๐ Ballotine of corn fed chicken, stuffed with a farce of thigh meat seasoned with lemon, oregano and thyme, cooked in a pan in PLENTY of foaming butter, thyme, rosemary and garlic
๐ง Belgian waffle bread sauce, seasoned with smoked maldon and Canadian maple syrup and blitzed smooth, with brown butter emulsified in there for good measure

Shallot tarte tatin, banana shallots cooked in caramel until sweet and jammy on a shatteringly crisp base of puff pastry, finished with a little drizzle of cold pressed rapeseed and thyme
๐ Twice brined and fried thigh, all the usual suspects (sugar salt brine, buttermilk bath, house dredge) finished with A splash of Canadian maple and plonked on a toasted piece of Belgian waffle
Served with a sauce made from the bones of the chickens, emulsified with rendered chicken drippings to make it nice and glossy!
