Weโ€™ve got some stunning pork courtesy of , both pan roast tenderloin and low and slow belly, cooked slowly until itโ€™s melt apart tender and glazed in some super sticky and spicy goodness, our classic grilled bread, spanking cod hariyali curry, a VERY cool little dessert Iโ€™ve been playing with and have wanted to get on a menu for AGES and of course our fudge, with a little twist to fit the theme this week!

CORN FED CHICKEN ๐Ÿ“๐Ÿ—๐Ÿง‡๐Ÿง…๐Ÿ

Our chicken main course on this weeks meat focused set menu!

๐Ÿ“ Ballotine of corn fed chicken, stuffed with a farce of thigh meat seasoned with lemon, oregano and thyme, cooked in a pan in PLENTY of foaming butter, thyme, rosemary and garlic

๐Ÿง‡ Belgian waffle bread sauce, seasoned with smoked maldon and Canadian maple syrup and blitzed smooth, with brown butter emulsified in there for good measure

๐Ÿง… Shallot tarte tatin, banana shallots cooked in caramel until sweet and jammy on a shatteringly crisp base of puff pastry, finished with a little drizzle of cold pressed rapeseed and thyme

๐Ÿ— Twice brined and fried thigh, all the usual suspects (sugar salt brine, buttermilk bath, house dredge) finished with A splash of Canadian maple and plonked on a toasted piece of Belgian waffle

Served with a sauce made from the bones of the chickens, emulsified with rendered chicken drippings to make it nice and glossy!

BUFFALO WINGS ๐ŸŒถ๏ธ๐Ÿ“๐Ÿ—๐Ÿง€

A naughty little treat garnishing the corn chowder on our meat focused menu!

We take chicken wings and seperate out the flats (best part, no arguments) and use the drums and tips for our chicken jus

We brine the flats in a mixture of salt, sugar, dried chillies and spices before giving them a few hours to confit in the oven, when theyโ€™re out we debone them and stuff them with a chicken farce.

Theyโ€™re flashed in the fryer to get a nice crisp skin before we glaze them in our hot honey buffalo sauce. Finished with a drizzle of Shropshire blue ranch, minced chives and crack of fennel seed and plonked on a nice little bed of sweet and spicy pickled celery!

The long and short of it is these are some pretty sensational wings, and I have eaten far too many this week ๐Ÿคซ

NASHVILLE HOT COD ๐ŸŽฃ๐Ÿ”ฅโ˜€๏ธ๐Ÿฅฌ๐ŸŒถ๏ธ

A lovely fish dish on our seafood menu this week!

๐ŸŽฃ We take loin of cod and dry brine it for a few hours before it takes a dip in a combination of buttermilk, gherkin liquor and lemon juice before being tossed in our secret house dredge (packed full of all sorts of herbs and spices, different varieties of peppers and salts) and getting chucked (*very gently placed) in bubbling hot oil. Then we give it a dip in our Nashville hot sauce made using cold pressed rapeseed, ancho, habanero, chipotle, smoked paprika, cayenne, garlic and onion powder and a few other bits and bobs

๐Ÿฅฌ We make a buttermilk ranch dressing blitzed with the last of the wild garlic and drizzle it over a wedge of baby gem, thatโ€™s topped with fresh dill and a pretty nifty little savoury crumb we make using pancetta and chicken skin (donโ€™t worry pescys, we have a meatless version too!) to bang a bit of savoury meaty umami goodness

A pretty stunning thing to eat in this weird is-it-hot-is-it-raining weather!
