Meet the New Head Chef Leading the Kitchen at Mourne Seafood Bar, Belfast!
Ryan Stringer returns to the heart of Belfast’s culinary scene as Head Chef of Mourne Seafood Bar, bringing with him a world-class pedigree earned in some of the most influential kitchens across the globe. A native of County Tyrone, Ryan is widely celebrated for his “minimalist but technical” approach, focusing on seasonal provenance and precision to elevate local ingredients.
A Global Culinary Journey:
Global Foundations: Ryan’s career is built on a foundation of international excellence, having spent years refining his craft in prestigious restaurants across California and Sydney, Australia.
The Noma & 108 Legacy:
In a career-defining move, Ryan completed a prestigious internship at the world-renowned Noma in Copenhagen. During this time, he was instrumental in helping the team launch its sister restaurant, 108, which made history by receiving a Michelin star in its very first year of operation.
The ELY Group:
Prior to his return to Belfast, Ryan spent over a decade as the Executive Chef for the ELY Group in Dublin. He oversaw multiple award-winning venues, developing a signature style that masterfully paired high-end Irish produce with world-class wine programmes.
Belfast Leadership:
Most recently, Ryan served as the Executive Chef of James St. Belfast for over four years. There, he was credited with revitalising the menu and maintaining the venue’s status as a cornerstone of Northern Ireland’s fine-dining landscape, ultimately earning him the title of LCN Chef of the Year.
At Mourne Seafood Bar, Ryan combines his international influences with a deep respect for local waters. His kitchen is a hub of sustainability and innovation, dedicated to showcasing the freshest local catches through the refined techniques he has mastered on the global stage.
