Born in London, England of Caribbean parents from Barbados and Trinidad the flavour of Caribbean cooking was handed down to me from my mother and grandmother. As I learnt to cook from standing alongside my mother in the kitchen in Barbados, the tasty traditional Barbadian dishes such as cou cou and flying fish; pudding and s***e, curry goat and the dessert of sweet bread along with many other dishes was a stable part of my diet and enjoyment as I grew up. Living in London where spices and herbs for the taste of the Island Barbados were as readily available as being in the Caribbean, we continued cooking over the years for small and large groups, including dinner parties. MamaHazel's catering, named after my mother is an extension of the divine flavoursome food of the Caribbean being introduced to Northern Ireland. MamaHazel's Caribbean cuisine is home cooked traditional Barbadian food. Barbadian dishes such as Rice & peas (Blackeye beans) and chicken cooked in various forms (Stewed, Je**ed, Curried), Jerk Pork, Codfish, Peppered steak, Plantain (Banana family), Barbadian chicken soup, Soul food soup, S***e (Pork pieces in fragrant lime and cucumber sauce) and everyday dishes such as macaroni cheese and many more are available, bringing a touch of the island Barbados to Northern Ireland.
