Exciting things coming. We’ve been quiet on here as of late as Phil has been travelling in Oaxaca, Mexico learning a little more about the region’s coffee culture and produce.

We were lucky to cup pre-harvest samples at and to meet with our longterm partners at Union San Pedro. Vamos!

On Monday’s agenda: roasting and posting Midwinter Elixir.

27/11/2025

Midwinter Elixir 25/26 production well underway. Get it on the Christmas list.

Introducing Midwinter Elixir. A coffee designed to be highly giftable and genuinely exceptional.

This year’s edition comes from Malaquías Cruz of the Sierra Mazateca, Oaxaca, Mexico. It’s a washed pluma hidalgo with notes of chocolate ganache, almonds and lemon zest.

A suitable present for your granda or your favourite specialty pourover nerd. Either should enjoy it just as much.

Finished in a super shiny, very cool gold-foil label.

More merch TBA 👀

We’ve been a regular feature on the shelves and in the cups so it’s been very cool to include a contribution from barista (and all round top dog) Peter Reid in our latest issue.

This year’s Union San Pedro has landed. Beautiful sacks from .coffee , brewing recipes from , and as always, incredible coffee from the producers of Union San Pedro in the Sierra Sur, Oaxaca, Mexico.

Roasting and posting in full swing. Our final boxset issue of Volume 2 is shipping now.

The Organic Issue ships this weekend.

To the consumer, organic is a guarantee. To the producer, it’s often much more like a gamble.

This issue of Exemplar looks at that double meaning. At what organic certification promises at the checkout vs. reality on a farm level.
