Happy World Milk Day! We’ve praised them before and are happy to again: Ivy House Farm (about 12 miles away) fulfil all our dairy needs, and their clotted cream and milk star in one of out newest desserts, Cheddar Strawberry, Custard, Long Pepper, Basil. It’s our take on a classic English custard, also features Tahitian vanilla and local eggs, and creates a rich, delicate base that pairs beautifully with the sweetness of British strawberries and the warmth of long pepper. Happy National Barbecue Day!

A day to celebrate – this won’t be what you’re expecting – the mighty carrot! We steam them for an hour, cook them over coal for 12-24 hours (in which time they shrink significantly) and then we rehydrate them in carrot juice. Our new Restaurant Manager, Selam Nafekegu, might be familiar to some of our more longstanding visitors. She held the position for four years from 2014, and we’re delighted to welcome her back, especially in light of all the experience and expertise she’s accumulated in prestigious properties during those last eight years. Great to have you back, Selam, and excited to see what the new Olive Tree era brings!

Oscar’s been with us for nearly two years; he joined as an apprentice, having previously been cook in a care home, and is now commis chef with responsibility for the larder and room service. He loves the veal sweetbreads dish, any combinations involving Riesling, and relishes in particular the team he’s a part of and how close-knit a community Bath’s businesses are.

Sad to say goodbye to our Restaurant Manager, the fabulous Aisling Bury. It’s only a month short of five years since she joined us as Assistant Manager, with apacked and interesting CV full of luxury brands, global travel, entrepreneurial spirit and a degree in Arabic Studies! Her time here has seen us go fromstrength to strength, thanks in no small part to her energy, dynamism and expertise. We talk a lot, with good reason, about our suppliers: finding the best, nurturing good relationships, learning about what they do. Wye Valley Produce on the English-Welsh borders are a case in point.

The Chinn family are fourth-generation farmers, working on light, sandy soil and south-facing slopes, creating a microclimate ideal for some of the UK’s earliest and best produce. What this means is green and white asparagus, as well as rhubarb, that’s as fresh and flavourful as any you’ll taste.
