Six weeks into wine training, and our palates are officially stretching their legs. We’ve explored a spectrum of oranges, dipped into a few expressions of red, and made just a fleeting visit to the land of white wine. Along the way, we’re learning to taste without leaning on the comfort of place, vintage, cuvée names, or even labels, trusting our glasses to do the talking.

Bottles on the journey so far include Victoria Torres Pecis Ladera 2022, Veronica Ortega La Llorana, Beck Hartweg Grand Cru Frankstein, and Gravner Ribolla 2016.

The right candidate will have at least 2 years experience cooking at a similar level. A desire to work with some of the South Wests best produce as well as an attitude to learn and develop under the tutorage of our head chef.

The UPSTAIRS at LANDRACE list reformatted, extended, reimagined. And bound in a leather folder crafted in Somerset from UK materials.

A little explanation:

The main body of the list is designed as a dialogue between The Classicists and The Iconoclasts. Wines that represent some of the world’s most iconic appelations versus makers who eschew adopted conventions or wines that defy stylistic categorisation. As always these designations are deliberately open-ended and we’re excited to see what tableside conversation might emerge from how we’ve structured these lists.

Perhaps most exciting, however, is the staff “Hot Picks” (in Hot Pink!) on the first page. This is a curated short list of wines that we’re finding especially compelling right now—that suit the weather, the cuisine, the current lunar phase 🫣.

Ultimately we hope it’s an interesting and seductive way to begin a meal with us. All in the service of getting you a little closer to the thing you actually feel like drinking. What else is a wine list for?
