Prep day underway and once again itโ€™s a battle with the heat to keep the dough in check. Just have to trust the process! ๐Ÿซก 24hrs to do its thing and then weโ€™ll be serving you up the freshest pizza there is in the sunshine. Canโ€™t wait to see you tomorrow! ๐Ÿ•โ˜€๏ธ๐Ÿ™‚

๐Ÿค“ For all the pizza dough geeks out there - our last service in the heatwave we were going for 61% hydration / 3% salt / 0.1% fresh yeast over 24 hours at 29c. ๐Ÿ• End result - puffy jiggly shiny balls ๐Ÿ˜‚
