One of this weeks ’special’ ingredients is N’duja sausage di Bracigliano which is produced a few miles off the beautiful Amafi coastline . Lots of pizza places in N.I. now have N’duja on the menu but in truth this is the only one I’ve ever really liked. For those of you who aren’t sure about N’duja heres a brief description .Nduja sausage is a spicy, spreadable pork salami from the region of Calabria in southern Italy. Its unique texture, soft and almost pâté-like, sets it apart from traditional cured meats. Made from a mixture of pork fat, typically shoulder or belly cuts, and a generous amount of Calabrian hot peppers, ‘nduja packs a fiery, smoky flavor that complements its rich, savory base. Its deep red colour and intense spice are characteristic of the region’s cuisine, offering a taste that’s both rustic and refined. Keep an eye out for it this week on the specials . The plan is to pair it with stracciatella cheese, roquito peppers and aged parmesan 😙
