About the Beans:

This amazing SL28 is grown in the eastern Sakami farm block which has irrigation, in case of any dry weather spells, the trees are irrigated to avoid any interruption of berry development. After picking and sorting, the berries are submerged in the fermentation tank which is covered to avoid any oxygen contact. It takes about 24 hours for the pH to lower to around 4.6 - 4.8, that's when the fermentation is considered complete. Berries are then set on drying beds for 3 days in a single layer to achieve uniform drying of the cherry surface. Once the surface has hardened, they will be piled in thicker layers to slow down the drying process, thus facilitating maximum sweetness to pe*****te from cherry flesh to beans. It will take another 3-4 weeks before the cherries are at the right humidity level.
