Easy energy balls made with whatever if left in the cupboard .

I have taken a simple adaptation from the following recipe and replaced the peanut butter with almond butter .
No raisins

A little quiet on the western front .. well three small ones to support and studies has left me feeling a break from the kitchen was in order .
However I wanted to share a little immune supporter for the winter months . So simple and effective and a great way to use up a chicken carcass.

One carcass of chicken
Root vegetables such as parsnips , carrots and suede (optional to what you have in the house)
3-5 garlic bulbs
An onion
Fresh turmeric (1 tablespoon of using powder)
A chicken stock cube if you want a richer flavour
Salt and pepper to season
1-2Leeks
2 stalks of celery

Note- not limited to any of the above
You can effectively use an left over vegetables in the house .

Throw it all in a large pan with water and simmer for 1-2 hrs. Take out and discard any bones . Take off any remaining chicken and put back into soup .

You can add potatoes or rice noodles etc . This was a staple growing up.

So simple , nutritious and tasty. Feeds the hearts and the soul .

Scottish mussels for dinner this evening and a little helper at hand .

Real food doesn’t need to be exclusive or expensive . These mussels were in the fresh Fish counter at Tesco at £3.25 a kilo. A kilo of omega 3 goodness sourced from the shores of our land .

Recipe goes a little like this :-
A kilo live mussels
Fresh garlic and shallots
Small bottle of white wine
Chicken stock
Herbs such as parsley (optional)
Small carton of cream

Clean mussels and discard of open mussels
Cook for 5-7 minutes with lid on with all the other ingredients .
Once cooked only use opened mussels .

Total time taken = 15 minutes
