Mothering Sunday is a day for acknowledging loved ones - whether they are present or sadly not. 💗

A very simple and uncomplicated bake today that reflects what we really enjoyed as children.

My own dear Mum would make the lightest little vanilla sponges that were topped with pastel coloured icing and pastel jellied diamond jewels.

Such fond and happy memories of the person who taught me everything about the importance and value of good, honest home baking.

Love you and miss you dearest Mum. 🫶🏻😘

Everyone it seems loves a sausage roll but everyone really LOVES a homemade sausage roll.

Maybe it’s the golden, buttery layers of flaky pastry wrapped around perfectly seasoned juicy sausage meat that really hits the spot
or just the irresistible smell that fills the kitchen while they are baking.

Fresh out of the oven, crisp on the outside and warm in the middle, they never seem to last very long.

Simple ingredients, put together with a whole lot of love, the sausage roll is the bite size snack that everyone wants to gather around.
Honestly, once you’ve tasted beautifully seasoned homemade sausage rolls, the shop-bought ones just don’t compare.

Soft, deep layers of lightly caramelised brown sugar sponge infused with hints of cinnamon spice
and topped with a silky soft caramel buttercream, crushed Biscoff crumbs and individual Lotus biscuits for that extra bit of crunch.

If comfort had a flavour, this would be right up there for young people so I made this for my daughters to enjoy.

The richly dark chocolate sponge filled with a lighter chocolate buttercream and fresh morello cherries soaked in a homemade boozy syrup was the perfect pick me up for my dear “old” Dad.

Cake choices baked with love for specific recipients in mind. 🫶🏻

The weather has certainly been pretty grim of late with long dark days, continuous rain and a distinct lack of sunshine.

So when I saw these magnificently vibrant ruby red blood oranges I knew I wanted to get creative with them.

Deeply colourful, and bursting with winter citrus flavours this homemade blood orange cake is pure sunshine on a plate.

Freshly pulped fruit is what gives the cake its natural blush colour and the flavour is sweet yet tart too, making it so fresh and so zingy.

The cake itself is soft, light and ever so buttery, and the finished top with jewels of blood orange and a lovely sticky almost caramelised glaze that just seeps into every nook.

I served this beauty with softly whipped orange mascarpone cream which meant it was an absolute winter winner on every level.

There’s definitely been some sunshine coming out of my kitchen ☀️😉

Valentine’s Day is all about sharing the love. ❤️

And it’s fair to say that a whole lot of love goes into each and every bake that comes out of my kitchen.

It’s wonderful seeing people’s reactions to my cakes and bakes when they come to enjoy a “Timeless Teas” afternoon tea experience.

Baking from the heart is what I do and my love language to others.

This very “retro“ looking beauty is called “Tenby Cream”

When made correctly “Tenby Cream” should separate into distinct layers:

a clear jelly like base
and a light, creamy, fluffy top which is most commonly lemon flavoured.

Whilst hardly ever seen today, it was once a staple of mid 20th century home cooking and also a British classic in domestic science classes.

A traditional Tenby Cream recipe
uses the natural reaction between acidic lemon and dairy to create the distinctive signature separated layers.

This is a recipe my own dear Mum had certainly mastered and perfected and she would often make it for friends or neighbours who were convalescing.

I still have her hand written recipe which I dug out and used to have a go at making for a friend who had recently come out of hospital after a very serious illness which had required her to be tube fed.

Having painstakingly followed each stage of the process I was so chuffed that it actually worked! 👏🏻

And the verdict was …..
that it was wonderfully light, tasted beautifully fresh, was very easy to swallow and most importantly very easy to digest.

you have always been and still continue to be my absolute inspiration.

Acknowledging Burns night is a great way to bring friends together to celebrate and enjoy Scottish culture.

Sharing good food with a large MacSween’s haggis covered in a rich creamy whisky sauce, plenty of neeps and tatties, and the obligatory wee dram of whisky accompaniment is an absolute winner.
Followed by a dessert of comforting Cranachan made with fresh plump raspberries, floral heather honey, toasted oatmeal and softly whipped cream best served with a traditional crunchy Scottish shortbread biscuit.

Add in some lively music and poetic words from Robbie Burns and you have a really great night where traditions feel fun and very communal.

A Scottish blessing 🏴󠁧󠁢󠁳󠁣󠁴󠁿

your table never bare,
your laughter loud,
and your heart light,
and may good fortune walk beside you,
all the days of your life.

A rich, dark, boozy fruit cake doesn’t seem to get people’s vote anymore
but a hearty slice with a hot drink on a cold and damp January day is still a cake we really enjoy.

Packed with plump juicy fruits that have been soaked in brandy for weeks, it is both hearty and comforting.

Classic recipes can still have their place.
