Luke.
A stoic pose from a stoic guy who has recently just crossed the boarder of 10 years at Tender Cow!
10 years!!! That length of time in any industry at any company is humbling. But to do it in hospitality amidst the chaos that is really takes an extraordinary person, and that he is.
Luke started with us when we were clueless (we still are) nestled amongst family members and novices alike. Fortunately for us Luke was also a novice in the industry so we learnt, adapted, made mistakes and grew together.
His immovable calmness is exactly what both Holl and I needed in the early days as both naive business owners amongst some incredibly busy services.
As we evolved Luke took on more and more and finally, fully took the reins at Alty so we could focus on Mackie Mayor.
I relate the running of a kitchen to moving house on a weekly basis. Constantly packing (prepping) and unpacking (selling said prep) on a weekly basis. It’s relentless, hard work and not for the faint hearted.
There’s no way we could try and summise the work he has got through over the years but to put it into context we chop approximately 300kg of potatoes a week in Alty. That’s 15 tonnes over 10 years. Luke’s probably been behind at least 5!!
Without Luke, his calm manner and unrelenting work ethic Alty would not be what it is today. He is the best example of taking a chance on someone who has absolutley zero experience in this gruelling industry and a massive reason as to why we go for people over experience. Give people a chance and let them surprise you.
