What an incredibly special night at Eden Court last night.

John and Morven, along with the rest of the band, were amazing. An evening filled with so many emotions both happy and sad, with plenty of laughs and craic in between too — a wonderful way to celebrate and remember their dad, Fergie.

To see the show completely sold out really says it all and was a lovely reminder of just how much Fergie and his music meant to so many people and how his musical legacy continues on.

A legacy that John and Morven are now carrying forward in their own way. I know Fergie would have been incredibly proud to see them both up there last night

A first for Megan seeing her dad up on stage, a special night that will be remembered.

Life at Mingarry Park...

It’s hard to believe we’re already heading towards the winter months once again.

One of the things we love most about being hoteliers is that no two days — or even two seasons — are ever quite the same. Every spring we open the doors wondering what the months ahead will bring and each year brings with it its own stories, challenges, new faces and familiar ones returning.

We’re incredibly lucky to have a great team around us, looking after our guests and rooms each day alongside our very talented Head Chef Jarek in the kitchen. It makes Mingarry Park not only a lovely place for our guests to escape to, but a lovely environment for us all to work in each day.

Running a small hotel certainly keeps us busy but after 14 seasons we still wouldn’t have it any other way.

And somehow, we’re already into the final five weeks of this one. The months seem to pass quicker every year, so we’ll be making the most of these last few weeks, welcoming our guests and enjoying the last of the season before winter arrives and Mingarry Park becomes a little quieter once again.

We never take for granted just how lucky we are to live here. Miles of wild landscapes, beautiful beaches and views like this right on our doorstep.

One of our favourite walks, right on the doorstep of Mingarry Park 🌿

We call it High Mingarry — a peaceful walk that leads up into the hills towards the old Mingarry settlement, with beautiful views looking back over the village and surrounding landscape.

Keep an eye out for our local red squirrels along the way too 🐿️

A lovely walk to enjoy before or after dinner.

A little taste of our new menu at Mingarry Park… ✨

Start with Charred Butternut Squash with whipped feta, pomegranate, sage & parsley gremolata and pumpkin seeds.

Follow with our Duo of Pork — slow-cooked pork belly & seared fillet, fondant celeriac, heritage carrot and wholegrain mustard jus.

And to finish… Peach Melba Sundae with vanilla cream, peach sorbet, macerated peach, raspberry coulis and almond crumble. 🍑
