Because more and more of you have been asking us what the MotorSpro is, how it works, and why we serve espresso this way. So here’s the story.
It all started with a stroke of genius by Marso Lola
One day, while pulling a turbo shot of Finca Sophia that she hadn’t tasted yet, she hit the button a second time to see if she could extract more just to have an idea of the flavor notes. What came out was unexpected. We tasted it, looked at each other, and immediately knew something special had happened. So the whole Motors team especially Selim and .silberman worked around this idea to create a shot that is extracted at its full potential.
Finca Sophia is an incredibly complex coffee. In the first part of the extraction, a lot of its sweetness, fruit and structure shine through. But in that second extraction, something else appeared. The florals were suddenly crystal clear, elegant and vibrant. It almost felt like a completely different espresso. In some ways, it was even more expressive than the first one.
At Motors Coffee, we’re constantly experimenting. New techniques, new ideas, new ways of brewing. We’re always chasing that feeling we all remember: the moment we first fell in love with coffee.That’s how the MotorSpro was born.By splitting a single extraction into two cups, we get two completely different expressions of the same coffee. Not every coffee works with this method. In fact, poor coffees tend to fall apart because the technique exposes every flaw as much as every quality.
We wish espresso competitions were more open to radical ideas like this. Progress in coffee has always come from people willing to challenge conventions and explore new possibilities. The closer we push the limits of extraction, the closer we get to the true essence of the coffee itself.
