Cabana: « At the end of the last century, an admirating New York Times described this restaurant with it’s old-fashioned, almost austere atmosphere as follows: « Rare is the Parisian bistro that remains solid, steady and satisfying year after year. But for 18 years I ‘ve made repeated pilgrimages to the classic 1900s bistro, Chez Georges, and it remains an example of the dream Paris bistro. »
Another twenty-seven years have passed, and the situation remains pleasantly unchanged, if not improved.
According to food critic François Simon, « The Wine list just keeps getting better » _ and he adds : «This 50s bistro, on the edge of the Place des Victoires, continues its solitary journey through the centuries. »
Or, in the wise words of Jay Rayner (himself the author of a rare review): « Paris is unashamed of its clichés. It works them. This because its clichés are fabulous. »(Cabana Paris City Guide 2026).
