Such a busy time for us right now catering for birthday parties and get togethers, we are cooking for local clients and people holidaying here from all over the world. Today we served home made sausage, jalapeno poppers, beef birria tostadas, BBQ pork ribs, chicken thighs plus salads. We are pretty booked up until mid September but happily taking bookings for autumn.

We are back at the The Bunker Bar 47120 on Wednesday 22 July. Serving Indian snacks such as chicken tikka skewers, aloo bonda, bowls of spiced potatoes and koftas, all served with authentic home made chutneys and sauces. Small plates priced at just 5/6 euros, perfect for hot weather appetites.

Today we picked a couple more buckets of apricots, and cut a selection of herbs including lemon verbena, bay, rosemary and two types of thyme. Already made a batch of apricot, orange and honey sauce, am thinking of using the lemon verbena to flavour an apricot jam, I am going to BBQ some with halloumi for a veggie option on Saturday, any other ideas?

These sausages are becoming famous! Cheddar and Jalapeno, smoking in the barrel smoker. 5kg home made sausages above a water bath, slowly smoking over hickory at 225F for approx 3 and a half hours. Once they are cooked they go into an ice bath to firm up the skins and give the sausages a snap. We serve slices of these as appetizers on our BBQ menu

Thanks to everyone who came last night. We had a blast! For those who asked what the sauce was we served with our 'freshly dug up potatoes' It was a Spanish Mojo Verde, made by grilling a green pepper and chilli, then peeling the skin off. Into the blender with a bunch of coriander, a couple of garlic cloves, 2 tbsp vinegar, about 6 tbsp olive oil, salt to taste and I added a splash of a green hot sauce to give a gentle kick.

My curry leaf trees are doing great. I was slightly worried as they suffered in the minus temperatures this winter, but a good prune in Spring has meant they have lots of lovely new growth. So, I am making a quick chutney for tonight - tomatoes, ginger, chilli, mustard seeds, curry leaves and jaggery for sweetness

What's your preference? Butter chicken, also known as chicken makhani - marinated chicken in a rich sauce, slightly spicy (as I can't do mild!) or Chicken Kadhai, which is similar to a balti, a tomato sauce with peppers and chillies, a little bit hotter. We are also cooking dal as the veggie option. It would help us enormously if we have an idea how many to cook for, so if you're planning on coming and haven't already done so please drop us a line 🌶️
