Rib infused with preserved lemon, glazed with a meat jus infused with fir buds.
Served with pressed kohlrabi and nori, blueberry and gentian marmalade, and a fir gel.

Nouveau à la carte.
Ribs piqué au citron confit, laqué d’un jus de viande aux bourgeons de sapin.
En garniture : compressé de chou-rave à l’algue nori, marmelade de myrtille à la gentiane et gel de sapin.
