Dish from our All Out menu 🌱 Asparagus, smoked pork & caviar

Green asparagus in three ways: the top parts are grilled, the middle parts are made into a mousse, and the peelings and bottom parts are made into a vinaigrette. Ahlberg’s Farm watercress, Umai Heritage caviar, and Perkkiö Farm pork smoked for three days.

Luigi Pira's Barolo Serralunga is sourced from Nebbiolo vines grown in vineyards that are located in the lowest part of Marenca and Margheria that date back to the late 1950s. ⁠

The first Barolo was produced only as recently in 1993⁠
