When you ask an angler what the best part of a fish is, you often hear ”the cheeks”. But sadly the cheeks also often go to waste after filleting. Stop the press, not anymore ✅ Tender and delicate Zander cheeks with fermented apples, water grass, king crab mayo, king crab xo sauce, and “muesli” made of sunflower seeds, pumpkin seeds and pike perch skin.

No winter lasts forever, no spring skips its turn. The colors are slowly coming back to life. We have a new menu with a new season! Pre-spring is down to earth, sweet, fermented, rich, creamy and crusty. Partridge, zander, mushrooms, potato, tempeh, cloudberries & sea buckthorn!

Moose bone porcelain plate 🦴 Possibly a worlds first?! Restaurant Nokka serves moose tartare on moose bone porcelain plates custom made for Nokka by artist 🍽️ All made from a moose harvested by

The goal was to furthermore minimize food waste, and with wild game all that is left at Nokka is the bones. But Ari & Mari came up with an idea to use the bones for plates.

Mari started the process with burning the moose bones in an open fire outdoors to remove any remaining fat and gelatin from the bones. That was followed by a round of higher heat in a pottery kiln, turning the bones charred by the first fire to pure white bone.
The bones were then milled to fine powder, ready to be combined with feldspar and other ingredients to porcelain clay. Moose bone plays a big role in the mix as 45% porcelain clay is bone powder.
