Some meats are memory.
The one from El Capricho begins long before it reaches the table. José Gordón travels the villages of the León mountains, Asturias, Galicia and Portugal in search of old animals, well raised and tended for years.
He steps into the stalls, asks what they eat and where they graze. He feels them, recognises where the fat will settle, and observes how altitude, rain and sea salt become part of each animal.
In that patient gaze, everything begins. And somehow, all of it remains in the meat: its depth, its texture and a flavour hard to mistake.
At De la O, it's already on the table. We look forward to sharing it with you.
