Katie and Alessandro’s wedding at the beautiful villa Baloo where our job was to wow the guests with incredible food.

The wedding celebration started with canapés as the sun came down. Za’atar chicken skewers, jamón croquettes, seabass ceviche with mandarin yuzu, gnudi pasta, and an oyster shucker at the reception.

Then Italian sharing starters, Homemade agnolotti with spinach, ricotta, butter and sage - and a sharing main of tomahawk, grilled chicken and hamachi.

Cooking up perfection. This is what we love.

Such a pleasure to provide the bar and catering for DJs lulah francs and Demi Riquísimo the coolest wedding, for the coolest people, and even featured in British Vogue.

“There, they enjoyed cocktails by the pool accompanied by Spanish classical guitarist Paco Fernandez whose music Tallulah had loved since she was a little girl. “We then had a huge mixture of sharing plates by La Grand Bouffe Ibiza – burrata, beautiful salads and lots of different fish and meat,” says Tallulah. “We decided to skip pudding and just have our wedding cake, which was designed to look like it was covered in chillies. It was so realistic you wouldn’t have known they weren’t real.” - British Vogue

We’d love to tell you that this is what goes into ONE dish but the reality is this just the plating up.

First we source the finest Island burrata. Slow roast the carrots in our secret harissa recipe. Mix fresh and fermented fennel, top with James’ classic boiled orange dressing, sprinkle the aleppo chilli flakes, butter roasted pumpkin seeds and our own fig leaf oil.

Every element made from scratch with the incredible ingredients ibiza has to offer, then what you see here is art of plating it up, teamwork, ready for every guest to share.

A wedding is made up of many great moments. For example the welcome cocktails, the vows, the first dance, the last guest still standing when the night has become something softer.

But then there is the meal.

The careful seating plan, with its small negotiations and hidden politics. The table dressed just so. Flowers, linen, glassware, candlelight. And the menu, chosen after a tasting perhaps a year before, finally arriving at the table as it was always meant to.

There is something lovely about everyone sitting down at once. The noise settling. The first glasses being poured. Plates arriving. For a moment, all that preparation becomes something very simple: people you love, eating together.
